INGREDIENTS
20 Ritz crackers
1/2 cup chopped nuts
1/2 cup granulated sugar
3 egg whites
1/2 cup brown sugar
1/2 tsp salt
1/2 tsp vanilla
Mix together crackers, nuts, and sugar and set aside. Beat egg whites to stiff peaks. Add brown sugar and mix until well combined. Add salt and vanilla. Fold cracker/nut mixture into egg whites. Transfer mixture into a well-greased pie dish. Bake at 350 degrees for 30 minutes.

I was recommended this video, and I really enjoyed your presentation! The texture of the pie indeed looks similar to a macaroon. When I think of Ritz and pie, I think of the famous mock apple dessert. Ritz is magic! 😃

When I chose this pie from the cookbook (just from the title) I expected it to be a mock apple pie. I was surprised when I actually read through the recipe and I was surprised again when I realized I didn’t need a pie crust! The last surprise came when I actually liked it! Ritz Cracker Apple Pie is an old Depression recipe. It's where the Ritz crackers pretend to be apples. THIS is something all together different, and looks delicious!

I laughed when you said you don't know where Jim gets his recipes.. He is a hoot. So cool you got to meet him. Maybe one day he will get my way. I never thought to make a pie with Ritz crackers. Interesting. Loved seeing the pictures and of the animals.

I was curious about this! Merengue texture is one of my favorites. I made a ritz cracker mock apple pie for a school project one time, many years ago. It was a late-depression era/WWII era recipe that was apparently on the back of the Ritz cracker box all the way into the 1980s! I think it was part of a book report or something. That one turned out great, too, and the ritz crackers did seem just like cooked apple slices.

@@GingerSnapKitchen WOW. I shattered my shoulder when covid hit. I didn't get the shot and still haven't. I think I got covid however. I threw up so bad I didn't think I'd survive. I haven't thrown up like that since I was a kid. I definitely kept a bucket near my bed for almost a year😋 It came out like a river. Never will forget that experience 😜

@@emily--m That sounds TERRIBLE! Mine wasn’t like that stuffy head, headache, loss of taste/smell, and weird, awful back pain. I couldn’t get comfortable for days. After about ten days, I was back to around 90%. Got my taste and smell back now and I think all is well. I guess I was lucky!
