When I was growing up, I had heard of Julia Child but had never watched her program. I always thought she sounded pretentious and stuffy. But she's so much the opposite - approachable and frank, sometimes even playful. I've been loving watching her here. Thank you for posting!

Her presentation is incredibly information rich so unlike today's cooking shows which are all fluff ... bring Julia back !!!

@@mariahwhitneycelinejanetmadona The Food Network is largely not worth watching anymore...it's about sensationalism and entertainment. There are still good shows on PBS.

Goose meat is very delicious, if you like dark meat. Later, she revised her recipe. You steam the goose first under foil in a stove top roasting pan and then roast it uncovered in the oven. That technique is in her later books as well as Jaques Pepin's. Geese are often on sale at grocery stores after the holidays. And all that trussing and stuffing isn't necessary.

When she was describing the types of Goose liver it reminded me of that scene in Casino when Nicki Santuro was talking about pink, and white veil.

Julia is the best we have....although the adds do not cater do Julia's fans......selling junk processed meal plans.

I don't think they have much meat on them but i have a big family and usually end up cooking 2 turkeys.

Gee I once tried to make duck for my husband, duck confit and beautiful roast breast (being an ex Chef) but he wouldn't have it! LOL he refused to touch it....."I'm not eating Daffy Duck"!!!! To be fair it was not a good quality duck sadly, I think it was what they call a utility duck.....it was a shame. I ate as much as I could anyway. Thanks to who is posting these videos. I have heard that pheasant is amazing but have never tried, maybe one day!

I am the dauther of a chef. I now live in ireland. The place is over run with beautiful wild pheasant! Highly recommend. P.S. I was once married to a man who did not see food as an adventure. We are now divorced. 🤗

@@cannett8966 Oh, I love how the Irish stuff a goose with mashed potato/onion and tart apple. No butter or milk in the mash and cooled before adding the rest and stuffing. The goose fat is amazing with that stuffing and I have never, ever had something so delicious:) I made it once and my young daughter to this day remembers that stuffing as the best too.
