The first in our #rockcakes series, baking parts of the Jurassic Coast, following the weeks of Bake Off. This week features Ladram Bay in cake.

Red Velvet Cake/ cliffs and rocks:
100g softened butter, 300g caster sugar, 2 large eggs, 3 tbsp cocoa powder, 3 tsp red food colouring (paste recommended, adjust quantities for gel or liquid), 250g plain flour, 150ml buttermilk, 1 tsp vanilla extract, 1 tsp bicarbonate of soda, 2 tsp cider vinegar.
Heat oven to Gas 4 (180 degrees C), grease and line baking tins, cream together butter and sugar, beat in the eggs, add cocoa powder and food colouring, beat in the flour and buttermilk, stir in the vanilla extract, in a separate bowl mix the bicarbonate of soda and cider vinegar and add this to the rest of the cake mixture. Bake for 35-45 minutes (until the cake springs back when pressed).
Frosting/ earth and grass:
150g butter, 150g cream cheese, 400g icing sugar, green fondant icing.
Beat the butter and cream cheese until smooth, stir in the icing sugar (sieved), spread over the sponge. Roll out the green icing (or white icing, dyed with green food colouring), using a clean and sterilised brush - indent the bristles into the icing to create a mossy/grass-like appearance, lay the icing over the cake and cut to shape.
