After slight disappointment about how my canned potatoes turned out, I finally try four ways to use them. Three of the options turned out great! One option still needs a little work. I am now excited about starting to rotate through our bottled potatoes!

I think you should make this a new series. Videos on what to make with all shelf stable foods would be a hit. Everyone makes videos on canning things, but not many show different recipes for using the canned goods!

With my canned potatoes I have found that when the mashed potatoes are a bit too wet, I just add in some instant potato flakes to bring it back to a consistency that I like. It works beautifully.

We use powdered milk in our canned potatoes rather than milk or cream and it achieves the same thing.

My first batch of canned potatoes came out just like yours. I used them up in soups. Thereafter, I changed it up a bit. A lot more time involved, but the end result is so much better. I peel and cut the potatoes in chunks, rounds or french fries and soak them for a couple of hours in water. I change the water about three times then refrigerate them in water overnight. The next day I drain and rinse, boil for three minutes and can with fresh water. They've been sitting on the shelf for two years and the water is clear with hardly any starch or mushy potatoes. Yay! There aren't much left now so I hope the ones I just planted do well this year!

When I was about 8 my family had Easter dinner at my aunts house. We all sat down said Grace and she began serving the ham and mashed potatoes. It was wonderful until I said out loud, innocently “ oh my favorite lumpy mashed potatoes “! I didn’t know I was being rude but the my mother looked mortified! And honestly I still love lumpy mashed potatoes! And I’m 60! I think inside my aunt laughed !

It doesn't make any difference to me lumpy or smooth they still taste like raters , love them I'm not picky and I thank God for all the food no matter what it looks like

@donna I also love lumpy mashed potatoes! So does my dad. My sister likes to whip hers, which are ok but I like little bits in mine!

Haha I did the same -- commented joyously that we had mashed potatoes "with real lumps" 😂. My poor mom. My grandma had made them and she was not pleased.

I love using my home canned (yellow) potatoes. I coat them in olive oil or chicken fat and then roast them in the airfryer. They get incredibly crispy on the outside and fluffy and creamy on the inside. So good!

That’s what I do! Coat in oil, season then air fry. Sometimes salt and pepper and sometimes I use a packet marinate seasoning. It’s great!

I’ve used mine several ways. I’ve drained them and shredded and made hash browns, I’ve made string beans with potatoes, quick mashed potatoes, popped them in with a roast or soup. Almost everything you do with fresh

I also make gravy from the liquid delicious and the mash the herb flavored ones . I use only non starchy potatoes for canning.

When I made my mashed potatoes from my canned potatoes, I brought a pan of water to a high boil and put the potatoes in until they were heated through, drained and mashed. My family loved them

I can’t tell you how much I appreciate this video. I am fairly new to canning, so I like to watch videos that say what they will & will not Can again. So many people put potatoes in the category where they would NOT can again. So I took potatoes off my “TO CAN LIST”. I’m so excited to put it back on the list!! Home canned potatoes taste just like the potatoes you buy at the store in tin cans. So to help you decide if taking the time and expense to home can potatoes, first see if you like what they taste like out of a tin can for around $1.00. I wasn’t a huge fan of the taste, but The Lord gave me an idea and I tried it, with much success! Simply use a few pieces of beef stew meat (I used 8 ounces) in with your potatoes to give them the beef stew taste! It works phenomenally well to “cover-up” the “canned” taste. Just process them for your meat time. My Yukon gold potatoes are firm and not mushy at all, despite being in my canner for 90 minutes, raw packed with the meat and boiling water added. I hope this helps!

When making mashed potatoes, I use a potato ricer rather than a masher to ensure a mixture that has no lumps.

You could always use the mashed potatoes the way my grandmother did by adding some egg and flour to make a potato pancake. I think that would be a great way to use them. Thanks for sharing 😊

This episode has got to be a personal favorite! I enjoy and learn from ALL your videos but this one has lifted a big load off my mind. Like you, I have canned potatoes that are about 3 years old and I have been hesitant about opening them, not not anymore. Seeing you make 3 completely successful recipies from 3-year old canned potatoes, and possibly a 4th (mashed potatoes, if you boil the potatoes a bit to soften them rather than just heat in the microwave), has given me the courage to get the potatoes out and whip up some potato dishes with them. I am no longer nervous about canning more because as you have shown, they DO retain their consistancy, their flavor and their viability. Thank you Pam, very much.

This is such a relief. I canned ten pounds of potatoes this year and then two weeks ago I heard someone say that her family didn't like the flavor of her canned potatoes so she puts them in highly seasoned recipes to cover up the taste. All I could think about was how much time I'd wasted. Now I feel better. Thank you.

I grew up eating potato soup. My Mother would peel potatoes,cut up onions/celery that were diced, adding butter,salt, pepper. It was so good. If she didn’t have celery she used celery salt. She would add whole milk to the”potato soup liquid from boiling. I use a little celery salt even with the celery. I’m going to make this today.

I canned russet potatoes that turned out a little mushy, but they make wonderful potatoe soup. I dump the whole jar with liquid in the pan and mash the potatoes like you did. Add a little milk and heat up. I then add 4 oz of cubed cream cheese per qt of potatoes and let that melt. Salt and pepper to taste. It is amazing and takes maybe 10 minutes.

This video came just in time for my husband's work potluck, we have been trying to find something everyone can eat and not have such a division between meat eaters and vegans, but to make things more difficult there is allot of variety in ethnicity at his work as well. So thank you so so much for that simple but delicious parsley potatoes recipe it was a huge hit across the board.

I canned some potatoes recently and tried them mashed with heavy cream and butter. Fantastic. When I opened the jar, I dumped them into a colander and rinsed them well. Then into a pot with a little fresh water to thoroughly heat up. A second drain, mash, season, eat. Delicious.

I also can potatoes that I have cut up for french fries. You have to rinse and dry them really good. Then lightly coat them with corn starch. Not heavy like flour. Just dust them and fry them and season with whatever you like. They turn out crispy on the outside and soft on the inside. It also works for frying the chunk potatoes. You should try them.

I love my canned potatoes! I use them for just frying. Give them a drain and a good rinse, then fry them up with some onions. Crispy on the outside and so creamy on the inside and you don't have to worry about having crunchy potatoes. They keep their shape through the frying process as well.

I know of one incident where a woman died of food poisoning from potato salad made with canned potatoes. ALWAYS COOK YOUR POTATOES BEFORE EATING EVEN IF THEYRE CANNED.

I can raw potatoes regularly. I love them! I will tell you, though what you should probably have done that I do is, put the potatoes in a bowl of water swoosh them around after about 10 minutes, drain it out. Do that three times to get a lot of that starch off of those and out of those potatoes before you process them then you won’t have all that thick starchy stuff When you’re ready to use them.

1870 Homestead uses their canned potatoes to make pan fried potatoes, but they drain them and then dredge them in cornstarch to make them crispy and crunchy... these all look good to me.. thanks for sharing

I use my canned potatoes all the time. I use them to make mashed potatoes, potato salad, fried potatoes, in soups etc. I rinse them from the jar and they’re awesome. I’ve canned russet’s, red and Yukon.

🙂I canned Yukon Gold, but I end up with water-locked potatoes. Spongy, full of water and blah. I warmed them before canning and I did add salt. So where did I go wrong? Looking at the jars, you would think they are perfect, but nooooooo. I have the same problem with winter squash. 🙃So it must be me. I'm doing something wrong.

I soak and rinse my potatoes to remove as much starch as I can, put them in the jar and process them. I don’t add salt. The only time I blanch is for russets as they are more starchy.

I soak them 20-30 min, rinse and repeat. I often do three soaks for russets. Yukon and red aren’t as starchy so I only do them twice.

I loooove canned potatoes! Wonderful idea on recipes, Pam and Jim. Potato variety will make a difference on starch in the jar. I'm still experimenting on which I like best , early red potatoes are number one so far in having the least amount. Others have mentioned on FB, that soaking them will help remove the starch prior to canning. Btw I have been freeze drying the potato starch solids for other things like thickening and using in agar recipes for mushroom growing. Another thing is that when canning taters, there is sometimes a chemical reaction that turns the white side of the canning lid black. Not often but it does happen and wont harm you.

I've been hesitant to can potatoes but my husband is planting a whole bed this year and I don't think I can store them successfully otherwise. You've given me hope!

If you store them without washing them in a covered container between layers of sand they will last at least six months without sprouting or decomposing

Just make sure you let your potatoes cure for at least 10 days before you can them and then should be fine. One year my grandparents took potatoes from the garden and immediately canned them and they tasted like dirt. They never did that again. Lol After that they always let them cure first and they always tasted fine.

very much enjoyed this video, I too can lots of potatoes & they come out looking just as yours, I just rinse them well with cold water & let them drain well, unless I'm mashing them & then I leave some of the starch makes a nice texture in mashed. I make potato salad with them often these days saves so much time & one of our favorite things is adding them with carrots, home canned beef & broth for a quick stew. Saw a video I decided to try last week for the air fryer, sprayed with EVOO, then rolled in Parmesan cheese (green can) panko bread crumbs & Kinders garlic, salt & pepper.. air fried 380 for about 15 minutes, stirred in middle & they were crisp on outside, soft in center.. The starch that comes out of the jar can be dehydrated, powdered and used like corn starch.

When I first started watching this video I was feeling a bit disappointed because I had been thinking of canning potatoes. Well I am happy to say that I now have new hope that they will turn out great. Thank you so much for this. If I hadn't seen it I would have been devastated to can potatoes for the first time only to find out they didn't turn out well. Great video as always! ❤️😀

I canned potatoes for the first time last fall. They turned out great! I peeled them, cut in large pieces, added some water , then put in my canner. I opened a jar the other day and they were delicious, I made a potato salad and did not have to cook the potatoes!

Using the Yukon Gold style potatoes means a lot less of the “gunk”. They are harder too peel, but I like the texture much better than russets. A pint of caned beef, canned potatoes, adding carrots and onions cooked quickly in a little beef broth makes a quick beef stew. Just make gravy with beef base and a roux or cornstarch. We have been enjoying the potatoes I canned last summer, and I will never do without them again! I can do up a small batch quickly in my Instant Pot Max, using up the few I have before leaving on vacation!

I’ve found using these in corn chowder are wonderful. I even add the starchy water from the potatoes to the soup which adds a nice texture to the broth.

I love canned potatoes! Living alone, it’s hard to go thru a sack, so these are great for me. I pressure can my sacks too. I have no issue with pressure canned potatoes. They taste just fine to me

I have canned potatoes like this for about 35 yrs. The cubed potatoes I use in potato soup , potato salad and I also fry the cubes like American fried potatoes. (Sometimes I leave the juice and starch with the potatoes in the pan, add butter and fry them up that way, it gives them a whole different flavor and consistency) Sometimes I rinse them off and fry them in butter. I use them in vegetable soup also. And yep, they make lumpy mashed potatoes.😂

Mine look like that. I rinse and rinse the starchy residue off, drain, and brown them in a frying pan with butter or avocado oil, season with onions, etc. They are on my shelf stored safely from spoilage and I love them.

I love that you’re showing us how to use some of the canned potatoes! I use my quarts of canned potatoes to make my great grandmothers potato soup recipe. They were pretty poor back then, and so my grandmother has always referred to this recipe as the poor man’s potato soup the only ingredients are potatoes a couple table spoons of butter,onion, celery, celery salt, salt and pepper, water in about a cup and a half of heavy cream or milk whichever one you have. Seat the onion and celery with the butter for a few minutes until they glaze over a bit then add all the rest of your ingredients until it cooks down to the taste you like.

This sounds just like the potato soup I grew up with and still want whenever I am sick. Didn't know it was poor man's soup, lol. (We were poor by the way, although I never knew it, so it makes sense.)

I love my canned potatoes! My husbands favorite is when I coat them in flour, a little cornstarch, seasonings and pan fry them (or air fryer). He likes them for breakfast with some eggs and breakfast meat. Yum!

So glad you're not disappointed anymore! I learned to can using your videos and your potato video was never a disappointment to me. My family enjoys them fried for breakfast! When you processes potatoes and want them firm blanche time is only a minute then quickly rinse it off in cold water, I raw pack my French fries. Pickling salt not kosher will help so they don't get cloudy.

I'm with @donna1018, I love little bits of potato in my mashed potatoes. Feels more like you are eating real potatoes instead of the processed junk. I call that one a win! And I actually used home canned potatoes for our family recipe of potato salad last week and it was awesome! So the only thing I can say is I rinsed the starch out of my potatoes several times before canning them just to make sure they did not turn dark. I really appreciate all the work you put into your videos. As a new canner, I am grateful for the knowledge you share.

We drain them, toss in oil and seasonings and then fry them or in the air fryer. So good.... just start experimenting. We do not use them for mashed tho...potato salad is good tho

Todd on That 1870s Homestead did roasted canned potatoes. He tossed them in corn starch which adds a crispy coating, they are really good that way.

I canned potatoes for the first time last year. I cut them in French fry form. I drained them. Dried on towel. Put them in plastic bag added oil and seasonings. Popped them in air fryer. Wow.

We have been canning our own potatoes (out of our garden) for 20+ years... they are fine! We make mashed potatoes, Potatoes and green beans, and Roasted Potatoes (in butter). I promise you they are fine, it's an excellent food for hard times... may not look great, but they eat just fine.

I just used a jar and to get them out of jar I ran fresh water in and used thin rubber spatula in the jar to gently break up and dumped in strainer to thoroughly rinse potatoes then put on cookie sheet and patted as dry as I could then drizzled with oil and spices and oven roasted until crispy. Turned out wonderful!

THANK YOU for doing these tests. I was reluctant to try them mashed or in potato salad. You gave me the confidence to give it a try. We do love the canned potatoes (rinsed under running water in a strainer and dried on a towel) fried up with onions, and polish or spicy Italian sausage. Also garlic powder, onion powder, celery seed, salt & pepper. My husband likes me to throw in an egg or two toward the end of cooking. This is a favorite around here... and easy. I'm also liking seeing how others have been successful using their canned potatoes. Next season I'm going to have to can MORE potatoes knowing all these uses.

I love having canned potatoes on my shelf. I haven't found anything that I can't use them in. In fact I canned up 50 pounds of potatoes a couple of years ago and used my last quart last month to make potato, broccoli cheese soup. I love the convenience of having them on my shelf. I'm glad you decided to give them a try. I've found that after you peel and dice your potatoes cover them with fresh water let them sit a bit, then drain and cover with water again..do this a few time's and it releases some of the starch in the potatoes before canning.

I have canned potatoes with leeks and made potato soup. I call it potato soup base. I have also fried canned potatoes. I just did some in French fry shape to try frying.

@@RoseRedHomestead Sorry for the confusion Jim. I definitely misspoke. I was referring to my numerous batches of pressure canned potatoes I did last year. I was concerned about them being too mushy by the appearance of the globby starch that settled. I’m 💯% confident they will be just fine after rinsing. Thanks for testing and putting out great videos!

Great video. We just made French fries from canned potatoes and it was okay. Wish the potatoes wouldn’t be so soft but hey, when there is nothing available I’ll take it. Tip: if you press the potatoes though a potato ricer first you won’t have lumps in your mashed, just warm them up in the microwave before you press them. 😊

I agree. The potato ricer should help with the lumps. I don't like using a mixer. It makes them like paste for me.

Double dip the French fries when cooking in oil. Cook the inside the first dip. Let them sit a bit and put them back in the oil. The second dip crisps the outside of the French fry.

A great way to use canned potatoes is to place a little olive oil into a gallon freezer bag then put the potatoes in and shake them until well coated. Pour in one pack of dry onion soup mix. Shake again. Place in a baking dish and bake at 350 until brown. A fantastic side dish!!!!

I canned fries, that way I can use them as is or smashed or chopped. Mine get cloudy too but I just make sure to rinse and drain. Great video!

I cannot remember which channel I was watching, but the gal coated her canned potatoes with bread crumbs and put them in the air fryer..have not tried it as yet, but will. Thanks for the recipes Pam and Jim. Oh with the potatoe soup I might add some chicken broth also for flavor.

I'm glad I watched this tonight. I've been canning our potatoes for the past few weeks and the first ones I did I did not know you weren't supposed to use the liquid you cooked them in. So they are thick looking at the bottom half of the jar. After I did the first ones I was reading on canning potatoes and each article said don't use the liquid they were cooked in but instead use boiling water. Now I have to say it's been an ordeal to get the water level JUST RIGHT. I was averaging at least a 25% failure rate. I bought a little measurer like yours and that really helped. I just have to be very careful not to put too much product into the jars and then they seal. Anyway now I know how I can use the canned potatoes. Thank you again for all you do for us! I've learned so much from you! 😊

My husband loves our canned potatoes! He rinses them off under water and fries them for breakfast. They are yummy. Thanks for the ideas for other uses for my potatoes. BTW, you make potato salad the same way I do! Dill pickles are awesome in potato salad, but in a pinch if I’m out of pickles, I use dried dill weed. TFS ❤

I have found it helpful to add a little bit of citric acid and a tiny bit of ascorbic acid (vitamin C) to the water when canning potatoes - both the consistency and the colour stay a lot better.

If you use fruit fresh instead the taste is better and it does improve color and texture.. Soak over night with it before canning really improves the starch problem with finished product.

@heatherd ½ tsp. of citric acid and ⅛ tsp. of vitamin C per 750 ml (roughly 1 ½ pint) jar. Sorry for the unusual jar size, our jars in Germany are a bit different from yours.

I just made fried potatoes out of a jar of potatoes. They were great! My Mom made potato salad just like that, but not the celery seed, or juice. She always added slivers of radish to it. It was always delicious. Glad you showed that about the air fryer. I have one, but been reluctant to use it. Maybe I will now. Thanks for sharing all this with us!

I par boil my potatoes using about 1/3 cup of white vinegar to my boiling gallon pot of water and leave for about 3 minutes remove drain and pack into my hot jars adding 1 teaspoon of canning salt per quart then fill each jar with hot water wipe rims apply lids and rings fingertip tight then process in my pressure canner. I find this removes excess starch and makes an excellent finished product. Thank y’all for all your great videos that show the correct way.

I canned several quarts of potatoes after watching your video. This was exactly what I needed to see on how to use them. I thought they would be a great way to make quick mashed potatoes. But I didn’t like how they didn’t “fluff” up. This was a great video giving me ideas for how to use them. My fam loves my canned potatoes. I dry them off, do a light dusting of corn starch and fry them. They cook up quick and are crispy.

My potato salad is similar to yours but with boiled potatoes. I love a mustardy salad. I'm glad to see you make yours like mine. I have canned potatoes in French fry strips that I will chop into small pieces to make my next potato salad. You encourage me to try new recipes. Thank you.

I found your potato video last summer & canned 50lbs of potatoes. I am new to canning & u thought I had done something wrong since mine all turned solid like yours. I didn't know if the liquid being "gone" in over half the jar meant they were bad, so threw it all out! Thank you for the update & recipes on your potatoes it's very helpful.

Thank you for this video! I just recently canned my first batch of potatoes and was shocked when I looked at them the next day. Like yours, they had absorbed about half of the liquid and were very cloudy. After some quick research I found out that the starch content of the white potatoes I used was probably the culprit. Now I know that they are still usable. Thanks again!

I rinse them and chop my onion. Put them in a skillet with a little bit of bacon fat with a little bit of crumbled bacon and fry them. Great for any meal.

My mom & I canned over 300lbs of potatoes this past summer and the liquid in the jars is clear. I wish I could post a picture. If you want I can email you a picture. What we did was soak the cut potatoes in water in the refrigerator overnight to get some starch off. We drained and rinsed them. Then we blanched them in boiling water for 30 seconds to a minute. Drained the water off and put the potatoes in the jars. Put fresh boiling water into the jars and 1tsp sea salt and then pressure canned for 40 minutes for quart jars. We do have to cook the potatoes when we open the jars because they are pretty much raw. I don’t know if this is how you canned yours or not. If not I hope this helps. Potatoes have a lot of starch so even if your liquid is cloudy in the jars the potatoes will hopefully still be fine to use.

I see your parsley potatoes, and raise “Putanesca” style. Dried red pepper flakes, salt, parsley, garlic powder, and tiny bits of dried tomatoes. Toss in olive oil, and air fry to desired doneness. “Slap your Mama good” as they say in the South. Best to all, with hug and thanks to Pam.
