These four meals demonstrate the versatility of dehydrated or freeze dried asparagus in meals. In scrambles, soups, and even powdered asparagus as an ingredient in fresh pasta, adding dried asparagus to your pantry is a smart choice.
Powdered Asparagus Soup
1/4 cup non-fat dry milk
1/3 cup asparagus powder
1/2 cup potato flakes
1 tsp chicken boullion
1 tsp onion flakes
1/4 tsp garlic powder
1/2 tsp Italian seasoning
4 cups water or chicken broth
Mix all ingredients together and simmer for about 5 minutes. . If a smooth soup is desired, strain before serving. Serve with a dollop of creme fraiche.
Fresh Asparagus Pasta with Garlic and Basil
Enough fresh asparagus pasta for 2 people
1-2 Tbs extra virgin olive oil
1/2 cup fresh basil, chopped
2-4 cloves garlic, minced
Few flakes of dried and crushed red pepper
1/2 cup chicken broth
3/4 cup grated Pecorino Romano cheese
Drop pasta into boiling, salted water and cook to al dente stage. Drain and return to pan.
Meanwhile, in a heavy pan, add olive oil, half of the fresh basil (1/4 cup) and minced garlic and cook until limp. Add broth and bring to a hard boil to reduce and slightly thicken the sauce--about 3-4 minutes. Pour sauce over the pasta and add remaining basil and 1/2 cup of the cheese and toss. Place servings on a plate and sprinkle with remaining cheese.

I have really enjoyed these videos on asparagus. I was blown away by your asparagus soup recipe using the powdered asparagus. That is definitely going on my to do list. I just can't thank you and Jim enough for all the time you so freely give to educate so many of us about preserving food for our family's future. You both are an inspiration to me. Thank you.

I dehydrate broccoli and powder it. Makes a scrumptious cream of broccoli soup and an equally delicious broccoli cheese soup. Now I'm going to try asparagus. Love your videos. You and Jim should write a book. It would be a best seller.

Boy would that have been handy before I retired. The powders in pasta would be a great way to get children to eat vegetables. Your meals here are so good in so many ways. Thank you - now I want a freeze dryer!

The great thing is that you can also powder veggies after dehydrating them, which is far less expensive than buying a freeze dryer. But I wanted a freeze dryer anyway! LOL.

@@RoseRedHomestead My freeze dryer will be delivered tomorrow...I have 60 asparagus plants that will have been in the ground for three years come spring, so I am very excited. I noticed that you used mason jars and no oxygen absorbers. I have wondered if that would work. Do you have a video about that? I would love more info on not having to have so much disposable garbage! I just found your channel today. Thank you for all you do!

I’m an Insurance adjuster and I specialize in catastrophe events. I’ve been in College Station working a hail storm. Since I haven’t been able to find any canning jars in my home town, I thought I’d go to Ace hardware here in College Station. Not only did they have a ton of canning jars, they also had a Harvest Right on display, and I came this close to purchasing it. Since I carry so much gear with me for my 3 week tours, I decided not to buy it. I think I will order one when I get home next week. You’ve convinced me that I need one 😬. Happy Mother’s Day!

I'm catching up on many videos these days. I've watched all 3 videos, today. Thank you for the info. Both soups look amazing. I love asparagus. Last year I planted a hugh plot of asparagus. They are doing amazing. Next year I hope to have enough to prep for storage. So many options. Also I love your plates and bowls. Lovely. Take care

I’ve watched all 3 of your asparagus videos and WOW, you are a plethora of knowledge when it comes to dehydrating, freeze drying, and canning!!! I LOVE asparagus and the meals you made look luscious!!! I’ve just recently purchased a dehydrator…wish I had a freeze dryer, but it’s not in my budget. But, I’m excited to try the dehydrated asparagus and powdering some of it. TY so much for sharing all your knowledge with us!!! 💕🌸💕

Asparagus powder--absolutely brilliant. Gluten is on my 'never eat' list, but I have been working on making good GF pasta. Asparagus powder will give me added incentive.

We are in south Texas and we had a hurricane here last year then the freeze in February. Talk about an eye opener. I am getting ready to order a presto pressure canner and I can't stop talking about those red buckets you have prepared for bugging out! We will do the same. Thank you again! It would indeed! Someone else suggested freeze drying the broth and then powdering it so the entire mix could be dry. I'm going to try that as well!

Pecorino Romano cheese is a budget friendly alternative to the more expensive Parmigiano Reggiano cheese. It's a bit saltier but pretty similar in flavor. If you have a Costco near you, they have a great selection of quality cheeses at remarkable prices. Also note that hard cheeses like these freeze beautifully and can be grated from frozen. This video was such a joy to watch, your creative thinking is always delightful. That pasta looked great and I'll definitely try the crème fraish soon.

Ms. RoseRed, I'm a new follower. I found you because I grow a lot of asparagus and was looking for ideas on how best to preserve it--other than pickling (we aren't big pickled anything eaters) and freezing it. I was really turned off on dehydrating it because yours looks so dark but it looks like it still makes a green powder. I hope that isn't because you mixed the dehydrated with the freeze dried. I really appreciate your gift to us with this information.

I love making home made pasta, freeze it like you do. I buy that cheese at Sam's Club, it is so much cheaper, can't beat good cheese, and you get a lot more. If you add a little pasta water to the cooked pasta when you add the cheese it makes a nice creamy sauce, always save a little and try it next time. Everything looks good.

If I ever get a freeze dryer, I will be powdering a percentage of all the vegetables I grow. I would like to see you experiment with powdered pumpkin or similar winter squash as a replacement for grain flour. I've seen several recipes for baked goods that sound delicious. Also, given the published nutrition of fresh vegetables, can you work out an estimate for 1 tbsp. of each of your vegetable powders? I think this would be valuable for the elderly or persons who have difficulty eating sufficient amounts of food to provide needed daily requirements. I know that many dislike the store-bought meal replacement drinks and it would seem to me that these powders would offer better flavour and nutrition without added preservatives. At 65 years of age with decades of experience in canning, freezing, and cold storage of home grown food, I find your channel the best I've seen on food preservation - I'm always looking forward to your next video. Thank you!

Pam, THANK YOU. I love asparagus and I never thought about dehydrating/freeze drying it until your videos. I normally blanch and freeze it. On the soup how much did you strain out? I wish you'd shown that part. I'm also wondering if you could do the same thing with Tomato powder, add a little milk/half n half to it and make a great Cream of Tomato Soup? I've got nearly a half-gallon of Tomato powder sitting here, I also use it as a substitution for tomato paste at times. Your thoughts? Oh Good news: My new presto canner came in last week. I'm about to unload my freezer of all the stock I've been freezing. I've run out of freezer room and I will be canning that off! Wish me luck!

There really wasn't a lot of asparagus fiber--less than a teaspoon--more onion chips than asparagus. Sorry about not showing that part! Your tomato powder would make great cream of tomato soup--or tomato pasta for that matter!

🎈Wonderful use of asparagus ideas! Thank you. Would you do a video showing how to dehydrate Greek yogurt and ways to use it? Have heard can add yogurt powder to recipe for bread, making yogurt bits for trail mix and snacks, and add to smoothies among a few ideas. Once dehydrated, is it shelf stable and for how long? Prefer freeze dried yogurt but that appliance is out of my budget. So dehydrator it is if end product is worthwhile. Hope your channel continues to flourish. With your easy to understand and easy to follow instructions, you’d be superb in an entertaining and informative TV series. Maybe write a book? I’d sure watch or read! How many others reading this would? Check like if yes!!👍

Yes you can. I do have slices of dehydrated lemon I slip into various dishes. And you are right about how it lifts and freshens flavors!

Love your comparisons in asparagus. Actually very helpful. I cannot help but clear up a bit of confusing/conflictng info on the pressure canned asparagus. According to your previous testing and examination of pressure canning, NO amount of regular boiling will kill botulism, so boiling the 2 year old canned soup for 10 minutes is for the cooking of the rice and thorough warming but NOT to kill botulism, which would not be there anyway, because it smelled fine, was still under vacuum and properly pressure canned preciously...right?

Close. There is a difference between the botulism spores--what you want to kill by proper processing--and the toxin they produce if improperly processed. The spores are killed at 240°F and above for the processing time recommended by the UDSA. If by chance, some survived and ended up producing some toxin, then simply boiling the food for 10 minutes destroys the toxin. It is the toxin that can be deadly. So when I boiled the soup, it was to cook the rice and also doubled as a safety precaution against any possible toxin. Does that make sense?

Got it. Just a precaution since it didn't bulge or spurt when opened . I am slowly getting this completely. I am intrigued that the asparagus freeze dried was excellent for eggs or maybe sauteeing but the dehydrated was better for soup or stew. How big is your asparagus patch and what is your yield?@@RoseRedHomestead

Was there a specific reason for starting completely cold on the scramble? Was it personal preference or something one should do with reconstituted eggs? I've never cooked with them before so I'm curious.

For years I cracked eggs I was going to scramble into a heated pan. The second the egg white hit the pan it cooked. Then I watched some professional chefs do scrambled eggs and they started with cold pans. That way, everything heats up together. I now much prefer doing it that way.

Sorry to criticize, but it's more effective to put the pasta into the sauce, on heat, letting the cheese melt a bit to make the sauce creamy with a touch of pasta cooking water. It looks tasty though
