If there is sooji in idly then thats called rava idly. In rice idly ppl generally don't add sooji. Instead of sooji the cheap places add maida to the rice batter to increase the quantity of idly per kg. Authentic rice idly is actually very rare in North India. Luckily I have my mum to make those soft rice idly. Could have included sarvana bhavan Delhi branch to increase authenticity and better representation of the idly.
