Rum without alcohol is possible, and you can make it too in just a few hours! This will be a simple recipe in the style of a lightly aged Spanish rum, giving us plenty of time to test it out in some cocktails, starting with the most popular rum drink in the world: The Daiquiri! We’ll follow this by using our Zero Rum in an alcohol-free Cuba Libre with all of the flavor and none of the alcohol, making for my favorite non-alcoholic alternative I’ve tried on the channel yet. Who said mocktails had to be boring? It’s Cocktail Time!

I usually use a bit of molasses to my virgin rum. Toasted oak chips for aged.

Two video ideas: 1) With the 2024 Summer Olympics in Paris coming up, it would be fun to see a video with some cocktail(s) highlighting French bottles. 2) The House of the Dragon season 2 is currently airing and has been really good. Hi Kevin, I would love to see a video or a recipe of the general terms of a good foam, how much liquid to how much methylcellulose and xanthan gum, how much sugar and so on.

Love how easy this is! Do you think that adding vinegar (making somewhat of a shrub) would better mimic that kick from a real rum?

You can use vinegar for kick too, but you'll of course get some extra acidity with this.

Hey @KevinKos, you have recommended a number of times now to freeze your zero-proof concoctions as a way of extending their utility. Have you ever had issues freezing your zero-proofs in glass? I would have assumed that the expansion of the ice would cause the glass to shatter? Or do you put your liquids in plastic before freezing?

Hello Kevin, i am working at a non alcoholic bar and i am creating all zero spirits (Tequila, jamaican rum, mezcal, gin ...). My problem is that i can't find a good way to clarify it, i tried the milk one and it worked but I didn't get a good result. Can you suggest for me a good method to clarify non alcoholic spirits. Toasted cane sugar and toasted coconut sugar as a mixed sweetener with dried bananas and maybe a small piece of dried pineapple would maybe recreate a rum Agricole. Or maybe add some vegetables for the literal vegetal note lol

Curious as to why you bashed a chunk of nutmeg in the mortar and pestle, rather then grate the amount you need with a microplane. If the goal is to increase surface area, wouldn’t the microplane produce superior results for less work?
