Ingredients:
Cake:
1 large lemon (yields 1/4 cup lemon juice and 1 Tbsp zest)
1 cup + 2 Tbsp cake flour
1 cup sugar
1 tsp baking powder
1/4 tsp salt
6 Tbsp vegetable oil
1 tsp vanilla extract
2 large eggs
1/4 cup reduced fat 2% milk
Topping:
1/2 cup sweetened coconut flakes
Frosting:
2 1/2 cups confectioners' sugar
1/2 cup (4 oz) cream cheese, room temperature
1/4 cup (2 oz) butter, room temperature
1/2 tsp vanilla extract
Yields: 12 cupcakes
