Love your channel and I am slowly getting my feet wet making sourdough bread and wondering how you handle the final proofing. Do you final proof overnight all your breads in their baskets in a fridge or how do you handle this part? I have been doing the cold fermenting for between 12-18 hrs in my fridge and everything is turning out great but if I was to start baking say 10 loaves at a time that would not work out. Good Lord, you don't slow down, do you?

Awe you are too sweet!! I do cold proof all of my bread in the fridge overnight I just purchased a second refrigerator so that I have more room because I was literally taking up my home refrigerator with bread and it was getting a bit crazy but yes, I do cold proof in the baskets overnight. I know if I don’t have something to to work towards or keep me busy I battle harder with anxiety. My mental health thieves when I’m keeping myself busy.

@@madarafarms Thank you for the reply. So if I do this a little down the road I would have to do the same thing and buy a nice used fridge. I do think the cold fermenting gives the sourdough a much better flavor. Keep inspiring everyone.

It depends on how many loaves I’m doing. I do 1.5 cups per loaf
