Lamington cake is an Australian recipe. This is really quick recipe. It becomes nice and spongy. This can be made from the ingredients easily available in your home. We are making this without butter, condensed milk or milk powder. You can make this cake in cooker too. You can try this recipe at home and drop a comment for me. Ingredients:
• 1/2 cup Milk
• 1/2 cup powdered Sugar
• 1/4 cup Oil
• 3~4 drops Vanilla essence
• 1 cup Maida
• 3 tbsp unsweetened Cocoa powder
• 1/2 tsp Baking soda
• 1/2 tsp Baking powder
• 1 tsp Lemon juice
• 1 cup Water
• 1/4 cup Sugar
• 1/4 cup Cocoa powder
• 2 tsp Corn flour
• 1/2 tsp Oil
• 2~3 drops Vanilla essence
• 1 tsp Sugar
• 4 tsp Water
• Desiccated Coconut
Method:
• Take milk that is at room temperature in a bowl. You can use water in place of milk.
• Add powdered sugar, oil and mix everything well together.
• You can blend this in mixer too.
• Add vanilla essence and mix well.
• Place a sieve on the bowl and add maida, unsweetened cocoa powder, baking soda, baking
powder and mix well.
• Sieve the mixture into the bowl and mix everything well together.
• Add lemon juice and mix well quickly.
• Grease a cake tin really good with lot of oil and sprinkle maida on it.
• Pour the cake mixture into the tray and spread evenly.
• Tap the tray really good.
• Preheat the cooker on medium heat for about 7-8 minutes.
• Place an empty pot at the base and a dish on it.
• Place the cake tin on the dish and close the lid.
• Bake the cake on medium heat for about 20-25 minutes.
• Take water in a sauce pan and add sugar, cocoa powder, corn flour and mix everything well
together. No lumps should be formed.
• Turn on the gas on medium heat and cook the mixture until it gets even consistency and
thickens up really good.
• Add oil, vanilla essence and mix well.
• Let the mixture cool down completely.
• Chocolate ganache is all ready.
• After baking the cake for about 25 minutes, turn off the gas and let the cake be in the cooker
for another 10 minutes.
• Open the lid and check with toothpick.
• If it comes out clean the cake is baked well.
• Take the cake tin out and let it cool down completely.
• Loosen the edges with a knife and flip the cake over into a dish.
• Poke the cake a little with a fork.
• Add sugar in water and heat it up.
• Spread this sugar syrup in the cake.
• You can spread any juice or coffee in place of sugar syrup.
• Cut the cake in any shape you want.
• Spread the ganache on the cake and spread a layer of desiccated coconut on it.
• Lamington cake is all ready.
