He did that so they couldn't make a "convicted witch" out of him, so they weren't able to seize his property, which went to his heirs.

Giles Corey's punishment was because he refused to stand trial, not because he wouldn't confess witchcraft.

Hey there! I'm currently writing a book about Giles Corey, so maybe I can help with this. In order for a prisoner to stand trial, they would have to be asked by the magistrate "How will you be tried?" The correct answer was "By God and my country." The case could not proceed until these words had been spoken. Giles was the only one who "stood mute" at his arraignment. He was asked how he would be tried, and just said nothing. This threw a big wrench in the proceedings, and he knew it. The punishment for standing mute was "peine forte et dure" or "strong and hard punishment." They weren't trying to kill Giles, only try to scare the frail old man into saying those simple 5 words. So it wasn't because he refused to enter a plea (he maintained his innocence all through his examination in April of that year), but was because he would not "put himself upon the country." Any of them who were given decent burials had one only because their family retrieved their body, under the cover of darkness, from the pit they were heaved into as removing their remains was a criminal offense. People who were tried and acquitted would have been buried whereever they lived out the rest of their lives.

I think it was illegal to bury an accused, convicted witch in the town cemeteries, so the family would take the body home and bury it on their farms.
