You did this the way I've been smoking trout for some time now. The soy mix is a great mix for smoked fish. Great minds think alike, they get us in trouble too lol

As always Great cook Jeff. I agree the soy sounds better. I will try both because I follow you and trust your choices. By the way I spent this past week in Florida, going home Monday, the weather was beautiful. I am jealous. Keep cookin, looking forward to the next smoke. This one seems healthy so I can live another week.

I did that brine method for the first time last year. I thought it was pretty amazing, and we loved the way it changed the Salmon. But Salmon burnt ends? I never would have thought of this! In fact I'm going to go back and look up the other burnt end cooks you've done too. Can't wait to see the one you did with chicken. Do you have any recommendations for sides? I'm always a little stuck coming up with something to serve with burnt ends. Great cook!

Can’t wait to try this, what temperature did you cook these at. When I do salmon at 200°, it usually cooks in 45 minutes to an hour. And I’m assuming you’re making these almost like a jerky.

I can't believe that got cut out of the video by mistake. Set your Smoker temp to 180 to 200 degrees F. I used the P4 smoke setting on Pit Boss. Yes, this won't be flaky.

Looks interesting but I don’t see any charring to make it “Burnt” ends. Seems more like near salmon jerky

I did not. I go for firm texture. USDA recommends 145. If you do a Google search some people say 145 is to high.
