Today we are making Salmon Ratatouille, if not a Salmon fan you can substitute Chicken instead! Ratatouille is a quick, hearty, delicious, and healthy recipe. Come along with us as we whip up dinner!
Ratatouille:
1/3 cup olive oil
2 medium onions chopped
3 cloves garlic minced
1 green & 1 red pepper diced
8 oz sliced mushrooms sliced
3 zucchini sliced
I can diced tomatoes with juice
4 Tbsp tomato paste
1 Teaspoon dried oregano
1/4 cup freshly chopped basil
Salt & Pepper
Sauté onion and olive oil until softened. Add garlic, peppers, mushrooms, zucchini, and sauté five minutes. Add tomatoes, oregano, salt, and pepper and simmer 15 minutes. Add tomato paste. Simmer 2 to 3 minutes. Add basil. Place in large roasting dish. 
Bread Crumbs:
Four slices of your choice bread, one clove garlic minced, 2 tablespoons of basil chopped a quarter cup of olive oil and salt and pepper.
Put all of the above in a food processor, and pulse until finely chopped. 
Salmon:
2 lb Salmon
1 bunch fresh basil
1/2 stick butter softened
Salt & pepper
Preheat oven to 400°. Chop basil and mix it with butter and salt and pepper. Put the fish on top of the ratatouille and smear the basil butter all over the top. Add the breadcrumbs and put in the hot oven for 25 minutes. 
If you like the salmon a little more well done let it go for 30 to 40 minutes. Removed from oven and let rest for five minutes.
