About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZfaq.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

I love the little smelt fried,seasoned,fresh lemon for squeezing. Green onion & a bowl of rice. Good eats,rt. outside the fish market in the parking lot

I love smelts. I usually flour them and then fry them in butter with salt and pepper. Isn't it amazing that so many cultures have a recipe for smelts? Nice job Hiro!

Seriously this looks absolutely delicious!! Damn it looks good! If you've never had smelt before, try it. It's a delicate, light, tender fish, and when you pair it with all of these flavors it's got to be amazing!

You don't do yourself justice, by calling this recipe, "Salt and Pepper," Smelt Fish. It should be called, "BEYOND," Salt and Pepper Smelt ! It looks so simple but delicious ! Can't wait to try this !

The cameraman cracks me up with some of the stuff he says: Cameraman: "That's the best part." (Hiro confused): "The garlic?" Cameraman: "Oh my goodness, garlic and scallions, incredible." Doesn't top his comment about the eel slithering out of the bin ("That's the problem with eel: they have a mind of their own and they just wanna get out." WTF?? LMAO!!!) but it's still funny. Love the channel guys. Keep up the good work.

Hey hiro! I was a cook before at a italian restraunt as i mentioned before i started when i was almost gonna be 16 so preety young! Now i moved on to a sushi restaurant and grill! So im very excited to see the opportunities that are coming my way! You inspired me to take my culinary to another level! Soon will be a sushi chef of my own! Hello Gentleman. I'm about a hour & a half from Chicago (By Starved Rock State Park) I remember as a young girl my Dad & Uncle would bring a bunch of smelt home. My mom & I would clean it and we would beer batter it along with onion rings. Thank you for bring back childhood memories.

Better then trying them whole That time there was eighty something I caught and I've nvr filet my smells b4 I've actually forgot about this video I still Filet my smells Took two hours cutting my 80 smells Worth the effort Its better then I expected

@@qanitfox664 I would love to get my hands on some fresh ones, but for right now I'm going to have to settle on frozen. I think that I'll be able to find them already so late, but eating the entrails didn't really sound appetizing to me! I know eating fish bones is supposed to be very healthy though especially once they soften.

The smelt would run in Lake Michigan in the late fall when it was friggin' cold, sometimes rainy too (seldom snow quite yet), and dad would have a fishing line with multiple little hooks and he'd toss that in (can't remember what or if he baited). He'd catch a bucket full and then we'd go home. Mom hates smelt because she was stuck with cleaning those smelt, alone. She didn't know how to filet. But dad would then roll the headless fish in egg and then flour them and fry them in a fry pan. The house would smell of frying oil for days since it was too cold and wet to keep the windows open. We'd eat it--I like it just like that with just a little salt on it, but mom would make this dashi+shoyu sauce (no ginger, no mirin, no sesame oil--mom wasn't much of a cook). There would never be any fishes left afterward. I loved them and now they are hard to find where I live. Sigh.

I used to catch those by running through the school, dragging my dip net. I'd get 1-3 each pass. I don't know how I didn't break an ankle running in that shallow water and rocky bottom. They were delicious.

I laugh how chef Ramsay says to cut bell peppers skin side down otherwise it's hard to cut yet here we have Hiro awesome chef with sharp knives no need to place the peppers a certain way when you're this good awesome video guys keep up the good work
