After years of feeding the saltwater hardhead catfish in Brook;s backyard it was time to see how these so called trash fish taste! Hardhead Catfish are so abundant and hardly ever consumed, as they are considered poor table fare. They are unregulated in the State of Florida. I show you how to fillet these catfish as well. I set out to turn this so called trash fish into a tasty Fried Catfish Po' Boy Sandwich with homemade remoulade and tartar sauce!

I'm a Missouri boy, the way you clean your saltwater cats is the same way I clean freshwater ones. It's neat to see it because apparently it's a strange way to do it around here, lol. In my experience, the off putting flavors come from the meat that touches the skin (and the bloodline, obviously). I usually trim just above the skin, leaving that little bit of meat behind. I'm not a fan of skinned catfish, but once I started doing that, I really came to appreciate them. I can't wait to try with saltwater cats next time I'm in Florida.

When I was in my teens, I brought a bucket full of these for mom to cook. She never cooked it, but used them as compost. I was so heartbroken that I never kept them again. But all that is going to change now!!!

Right? Lol. Only time cats ever made it to the fishouse. Was if one of us commercial guys had our nets tore up by em. N they were 5 cent a pound crab bait. And destroyed nets. Luckily in years of gill netting. Never happened to us. I'd eat palmetto bugs first hahah

Bro, you are one of the few guys that actually knows what to do with those hardheads! And you pointed out the most important key in trimming away the bloodline....I've done it many a times and I'll put that saltwater catfish up against any freshwater catfish and in my opinion, it's just as good if not a little bit better depending on where its caught and how its prepared. I enjoy catching, cooking, and eating those catfish despite their reputation. I'd say let's petition to have the hardhead catfish upgraded to at least good table fare provided proper preparation....i.e. bleeding and most importantly, shaving off the bloodline. Here in tn there are alot of catfish being ate. I always put them in yellow mustard like you do with buttermilk, then dredge in cornmeal with 1/3 as much flour. Then they are great no fishy bloodline taste. Brookes father seems a great guy. Hes like me, he simply enjoys to eat.

Thanks for letting the native Floridians in Naples know how good the catfish are. I go down there for three weeks around Xmas and fish the beach and they all say that you can’t eat that fish. Well now you showed them there good to eat. Just don’t let them know how good big pinfish are. Thanks Christian

Thanks for posting this. Everyone around me says hardheads are a trash fish, but I could never find anything wrong with them. I took one home to eat one time and couldn't figure what everyone's problem was afterwards. Thanks for making me know that I'm not crazy.

People are lazy. Channel cat is slimy. So people think it's a trash fish like the Florida Spotted Gar. Wash them off with some soap water, skin them and you have meat. I like gar meat it's like one big loin when you get the shell off.

I ABSOLUTELY LOVE saltwater catfish. One of my all time favorite fish. And Victor, try using dill pickle relish next time in your tartar sauce.

LOL we went shrimping a few weeks ago. I threw my cast net on some bait and ended up with 50ish catfish. They were so heavy it was hard to get in the boat. Buy the time we got them out of the net they were mostly dead. So we filleted them with an electric fillet knife. Had about 8 people over for a fish fry. Everyone liked the catfish. Porgy was the favorite with Lane snapper a close second. I'll be honest I grew up in Florida and have always thought the catfish were trash. Fooled me it was actually pretty good. You're right about the tartar sauce, stuff off the shelves often have vinegar in it, and some places that make their own use lemons juice to add a little acidity without the vinegar twinge. I personally use no acid, a very similar recipe to yours, except I add about a tablespoon of chopped up capers.

I've always heard bad things about salt water hard head cats. I ate them along time ago and they were delicious. Reminded me of the thin cut catfish fillets you get some places down south.

I have to continue....you nailed it with the buttermilk!!!! I'm 63 years old...and ever since I remember....my Grandma ...my Mom...Everyone, soaked catfish in buttermilk for a minimum of 30 minutes...it pulls out the muddy, fishy flavor and leaves all the yummmm. You kids are a breath of fresh air....Love watching you!!!!! I grew up in the south, but have never ocean fished. Catfish, however, is catfish!!!!!

When I first moved to the Florida panhandle I must have eaten a few buckets of hardhead cats before I was told they were not good to eat. I'm not gonna stop now. The Po Boy is a great idea. Not t had one in forever. Great video I'm going to copy the sauce looked great

Very good video! So many saltwater anglers turn up their noses at the saltwater catfish. I get it, they are messy but they are good. I've done a lot of freshwater catfish fishing and last year fried up my first saltwater cat (Sailfin Gafftop catfish) and it was very good. I'm looking forward to trying hardhead. Fishing like this is really fun for kids, its a great way to keep their interest. Funny thing, one of my latest videos was a catfish Po'boy, with freshwater cats. I may or may not have stolen Brook's bang bang sauce and used it. 😀😉 This is another video for my recipes playlist, thanks!

I’m from Louisiana and I’ve always eaten fresh water cats and I’ve heard the stories about saltwater cats not be good but I tried them and I think they’re very tasty

I have noticed when I fillet white bass that when I let then soak in cool salt water for about 45 minutes the salt pulls a lot of the blood out from the blood line. Dont know if it work on salt water fish but may be worth a try

In Oklahoma I was raised eating catfish dredged in an egg wash mixed with plain yellow mustard breaded with Louisiana lemon fish fry. It is a different flavor the mustard you dont taste but the lemon makes the catfish awesome

When salt water fish are caught, it's best to bleed them out in a salt water ice bath (slurry)

I've never brined bass, but I do brine Black Tip shark and other more bloody fish (even stingray). I agree that it does help. I bleed out my sharks, but I'm going to start bleeding all my other fish as well. The slurry Aaron is referring to is more about getting the internal temperature of the fish down very quickly.

No kidding! The common carp! I have watched a bunch of guys from Russia keeping a ton of carp before and they told me where they came from carp are delicacies! They said we Americans are stupid because we don’t even know what’s good eatin’!

I ended up in a hospital because of one. I’ve been stuck many times by ours in Ohio but when my hand got like it did I freaked out and went to the hospital....first time going to Florida.

Gafftop, or Sail cats are great eating too. After you trim out the bloodline they make for a fantastic fish fry.

I've caught a lot of those hard heads before, but have never eaten them before. Do they taste similar to the freshwater variety? I'm definitely going to have to try it now. They really did look delicious. Thanks for the upload Vic.

They look almost identical to the freshwater Bullheads we catch in Michigan, apart from the shape of the tail (square, rather than forked like the ones in the ocean). They looked pretty much the same inside as well as outside, and when cooked, could have easily passed for Bullheads. Bullheads are delicious, BTW, but, since they're considered a "rough" fish there are no size or bag limits.

Raised on Mississippi channel cat, and to me there is nothing better to eat. You did a good job of preparing the fillets for cooking, it is the way we do ours. Actually the salt water cat should be better flavor than our muddy waters up here in northern IL. I would love to try yours someday victor those sauces I think would be the showstopper. good job

I was raised in Fort Myers. We NEVER kept catfish. There were some old native Floridians that would eat sail cats. I enjoyed watching the video. Thanks

I like fishing and I watch all the fishing channels victor is the best cook 👩‍🍳 by far he doesn’t even make a mess!! Brook is the bomb 💣 keep it up 👍.

I've got a friend with a wife from the Philippines and lady fish are really commonly used to make SE Asian Fish balls/ Cakes. I haven't tried it yet, but it looks amazing.

@@LandsharkOutdoors hop just south of the south jetty in stuart. was catching 5+lb bluefish and 3-4 lb ladyfish at the same time throwing a clarke spoon. Could throw a goofy jig and teaser and pick up a bonus pomp.

Lizardfish is delicious! Caught a pretty big one last year and the captain recommended it, was not disappointed.

There actually a better way to clean catfish first u chop there head of cut down the middle of its stomach and take out the guts and then all u have to do is peal of the skin

danthebeeman Been finned bunch of times myself... It sucks. Scrape a little slime off the fish and smear it on the wound, stops the pain immediately. 🤷‍♂️ Also, seen a guy get blood poisoning from catfish fin. ✌️

The key to getting catfish to lose the “game taste” is to put them straight on ice, bleed them properly, take out your bloodline, I soak them overnight in a saltwater brine, then I soak them 24 hours in buttermilk. My family has been doing this since the depression in Oklahoma. When I cook them people don’t believe they are catfish. U have helped me now I’m helping you.

Matthew Beintema first time I vacationed to Florida we stayed on a canal and I was having and absolute blast catching these. Just like the little cats at home and even outs can hurt you pretty bad but I took a spin to the hand and my hand got huge. Lol I ended up in a hospital that night🤷🏼‍♂️😂

@@matthewbeintema1155 As far as i know, only hardhead cats (saltwater) have venomous spines. We throw them back in Louisiana, this is the first time I have ever heard of anyone eating them though the ones we catch in Lake Pontchatrain were always way to small to bother with.

You kids are awesome. I always get a smile when I see young people enjoying what God gave us. I am a fresh water catfisherman and they are great. I wonder if the salt water ones are stronger tasting. We cut down the back then pull off the skin with pliars then fillet them.
