San Martino Biscuits: a treasure of Sicilian cuisine. San Martino Biscuits are a traditional dessert prepared on the occasion of the feast of San Martino every 11th of November. The recipe, which originates on our beautiful island, is handed down from generation to generation and represents a true treasure of Sicilian cuisine. The preparation of San Martino biscuits is quite simple: it starts with the preparation of a dough based on flour, sugar , lard, cloves, yeast and fennel seeds. Once kneaded, the dough is left to rest for half an hour, after which it is shaped into a spiral shape. After shaping, the San Martino Biscuits must bake in the oven at 180° for approximately 20-25 minutes. In this way, they become golden and soft and you could already enjoy them like this, as this would be the soft version of the recipe. For the biscuit version (which is the one I will make) you need to bake the biscuits a second time but this time at 150° for about 30-40 minutes. San Martino Biscuits are perfect to accompany a tea or coffee, or to be served as dessert after a meal. In my area they always accompany a nice glass of wine or muscat. In any case, they represent a symbol of the Sicilian culinary tradition and of the feast of San Martino. In conclusion, if you want to try a dessert with an authentic and traditional flavour, you cannot miss the Sicilian San Martino Biscuits. Their history and flavor will win you over at the first taste!
INGREDIENTS FOR SAINT MARTIN'S BISCUITS
- 500g 00 flour
- 125g Sugar
- 60g Lard
- 12g Fresh brewer's yeast
- 220g Lukewarm water
- 3g Salt
- 8g Fennel seeds
- 1g Fennel seeds powder
