Tip: (when the pancakes get bubbly it's the perfect time to flip them over because they might get burnt)

I’d say when the pancakes begin to form tiny holes within’ the simmering sound, it’s the perfect time to flip.

The great secret of perfect pancakes is to add some plaster to the dough. It seems to be creepy but it works in amazing way. Pancakes are fluffy, springly and they don't fall apart. The german chef has revealed me this trick.
