I would suggest El Yucateco, but be sure to learn your Mexican’s tolerance for spice because the range now goes from chipotle to ghost pepper.

I smell like cinnamon which makes sense with my mexican as diet always having a fuck ton of cinnamon or red af tea. ​@@dwippity Marble is smooth and the one made of Lava rock is rough, it will grind apart wet ingredients whilst the marble just kind of smears wet stuff around. Edit: Marble seems to work best on crushing chunks of dried things that you want to turn into a powder, like pills, and large grain specialty salts, things that will crush easily between 2 smooth surfaces and become powdery. You can do those things in the Lava rock one but alot of your product will get stuck in the pores of the rock.

As an asian indian, i can confirm. Rice cuts grooves into the rock that helps with grinding. Garlic helps coat and preserve those grooves. Please always season your rocks (bowl for crushing or flat for cooking), because they last longer and give you what Europeans wont give you: flavor.

For anyone in the comments who seem confused, porous doesn't mean liquids flow though it like a cloth, it means it absorbs liquids like a sponge, a very thick sponge. It holds onto flavors that have been ground up on it over time adding to the flavor of foods you make with it. Edit: spelling

You don't really season it. You're really just breaking it in. Getting rid of all the little specs, the seasoning garlic oils don't stay as it isn't metal. And when you wash it all the oils wash off. You can also use dry corn instead of rice.

Yeah it is just a trendy thing in the english language to call things with their foreign name instead of just saying mexican mortar and pestle, or volcanic mortar and pestle. molcajete is just the mexican spanish name for mortar and pestle.

@@babypluto08 “seasoning” basically means to simulate having had the experience of many seasons (of the year). It’s similar to the term “well-seasoned” referring to a farmer or an experienced worker who’s been around a while. Your mother seasoned her molcajete by using it for many, many years, breaking it in and making it more consistent. This is just something you should do if you have a NEW one.

I sold a molcajete two years ago on offer up. It was big enough to fit a full size wine bottle in it and was more than 50 years old. Used to be in my grandparents restaurant that’s been shut down for 30 years. It was from Mexico and was made out of lava rock. Could only get 125 for it but it helped pay for grandmas funeral. Sure wish I could’ve kept it.

As someone that isn't Mexican can someone explain the science behind this? Genuinely asking to understand. Do you clean it regularly or is it seasoning like cast iron and cleaning must be done carefully to preserve its condition? Because I'm under the impression that the rice and stuff will mold or spoil just filling up the gaps and then it would get into the food right?

You can find real ones on Amazon they just won't be 25 dollars this guy was talking out of his ass when he said that. Like official molcajete producers wouldn't sell on the largest online store in the world.

Everyone commenting “as a Mexican blah blah blah…” when in reality, if you were actually Mexican and you really knew all of these kitchen tools made out of “piedra volcánica” (metate, molcajete, molino, etc.) You should’ve known you can also do the “curada” with corn and/or beans-that’s what indigenous people used-remember: Mexico’s ancient cuisine ingredients are corn and beans, NOT rice

@Cyrus Bellefeuille I'm not sure, I haven't used a regular mortar and pestel in a while. From what I can tell, the biggest differences are: 1) It's very heavy, as well as somewhat shallower and wider than most mortar and pestels. 2) It's very abrasive, so it's good for grinding things down very quickly, even fiberous stuff like peppers. 3) The little nooks and crannies get filled with herbs and seasonings, so over time, it develops its own unique flavor. Almost like a cast iron pan. 4) It's hard but brittle, so using it to pound stuff can actually crack it.

My brother bought one and I had to do the work. I did it three times. I think I lasted for five hours cleaning it with rice and salt that my hands right now are hurting so much and I have sensitive skin. It made it crack. My skin I just called it a rock, but mine came from San Salvador Volcano rock

You could skip the rice and use sandpaper or a file. Those work well and smoothing stone, this is mostly due to the fact that it's their intended purpose

My friend got one of these, or maybe it was a mortar and pestle, but either way when she told me you have to grind rice and stuff into it to “get the rock debris out” it BLEW MY MIND. Why would you ever want to buy something that you have to finish polishing yourself? Might as well make the whole thing from scratch if you have to fucking grind the inedible rock chunks off of your dish before using it anyway. It’s literally like if you had to pick splinters out of your toilet paper before using it
