As you plan to accommodate clients at your property, be a little bit cautious about electrical and fire hazard installations. The requirements are significantly higher as for a private property. A neighbor had done a fantastic renovation of an old bastide here in the Luberon nearby with a UK team. They did a great job, but for the 2 points above it was just their appreciation of French norms, and it failed completely on inspection. The guy couldn't open his business and had to redo a lot of stuff.

I can’t understand why you are not protecting the wooden floors from the paint of the walls. Even if you’re going to use carpet, you’re making a mess of the floors and you’re not going to be able to use them later when you get bored of the carpet 😮

you could argue with the methodes, in France there are about 6 types of plaster , not 2 like in uk! each type need expertise, and aren't only Enduit Multi as used mainly by bucherer

I absolutely love the sofa. The chair set is gorgeous. I did prefer the warmer tones as well .. so much to choose for furnishings. Choosing carpeting is the worst/hardest especially if you are trying to match to wall colours and furnishings. You are doing great, so far everything is calming, warm and welcoming.
