Ingredients
For the Beef
½ lb beef, cut into 3" long thin strips (such as sirloin, chuck, short ribs or tri-tip)
1 tbsp soy sauce
1 tbsp sugar
½ tbsp sesame oil
½ tbsp mirin (Seasoned rice wine, if you don't have it, leave it out)
1 clove garlic, chopped
For Vegetables & Egg Omlet
2 eggs, lightly beaten
½ medium size onion, thinly silced
1 ¼ bell pepper, fine julienne
½ large size carrot, fine julienne
5 shiitake mushrooms, thinly sliced (You can substitute to any other mushrooms)
12 oz spinach (1 large bunch), cleaned well
salt and vegetable oil
For the Noodles
14 to 16 oz Korean sweet potato noodle, Dangmyun amzn.to/2LtyfkD
For the Sauce
⅓ cup soy sauce
⅓ cup sugar, honey or agave nectar (if you are using agave, add additional 1 tbsp soy sauce)
2 tbsp sesame oil
1 tbsp sesame seeds
1/2 tsp black pepper

Mmmmmmmmm! I really enjoy the chewiness of japchae. Now I know not to do the final step of stir frying. That’s a great time saver and I like the idea that the veg will stay crisper too. Oh I can’t wait to make japchae again!!!

Made an amount slightly bigger than what you make here for my roommate and I. Was supposed to last 3 days. We ate half, put in the fridge, then opened the fridge 3 times during that day and finished all of it. It's too good 🙏🏻

You may or may not ever see my comment but I just wanted you to know how much I appreciate watching your videos. I love how you are always so energetic and excited! I had cancer 5 years ago, I would watch your videos on Facebook in hopes that it would help stimulate my appetite after chemo because you’re food always looked delicious, especially when you would eat afterwards. I made this! I was worried when I boiled 16oz of sweet potato noodles because my eyes told me it wouldn’t be enough noodles, but when you mix everything together, it’s perfect!! Next time, I might not put so much sesame oil because it was too strong for my families taste, but other than that i LOVE how this came out! I used beef chuck slices and I pounded them before slicing them into strips. I will absolutely make this again. Thank you so much, Seonkyoung!!

OMG, I love Japchae!!! I first learned how to make it from Maanchi, here on KZfaq. Your technique and style is very similar to hers but yours has less steps and I bet it tastes just as good...gonna give your way a try!

I love the idea of you saying the correct name for your noodles as it helps us non-Koreans to learn pronunciation and context. I especially like that you show us the Korean dangmyun name and the corresponding Korean glass noodle name in your written instructions. That's what makes it the perfect cooking lesson. Week 4.5 of social distancing here in Calgary. Have been binge-watching and building my “must have” grocery list for when I can go to the closest Asian Market for all of the specialty items I can’t get at the local grocery store. Gotta say... you are a TOTAL corn ball. So refreshing to see you do your Japchae Jive while you unappologetically eat with your fingers. At a time when there is so much darkness and negativity, your goofiness has been sooo refreshing. Lots of respect, appreciation and love from Calgary. Be well and safe to you and all out there.

❤❤❤This is literally life changing for me. My whole life I thought I didn’t like vegetables and that I’d have to keep forcing myself to eat them. No, no, no, nope - the more Korean recipes I make the more I realise that I LOVE Korean style vegetables. I tried this! It’s so good 🤤🤤🤤🤤 I thought that the sauce for the last part was too much so I ended up stir frying which made it less soaked and more flavorful. Thank you ❤️❤️❤️❤️

I just made this today...part of my quarantine cooking where I’m trying all new recipes and it was delicious. As good as any Korean restaurant in Hawaii (even better than some, lol). That one looks easy. I love stir fried noodles like chapchae. It's also one of the best party foods. Oh by the way I am watchin from the Philippines. ❤😊🇵🇭

I love that I can still have this dispite having to go on an anti inflammatory diet I do have to adjust something's, but most of them are one's that alternatives are given in the video
