I've made a version of this dish before, delicious! Though I like to add a bit of turmeric for color and nutrition. Also are eggs baked on stovetop, or do you put it in oven for a short period of time?

Oven at 375 for 7-10 minutes according to their site. That's what I did and it worked perfectly.

It's honest. So often recipes will give an amount of time that simply doesn't suffice, in the interest of not scaring cooks off. Heard of clickbait? That could be called cookbait, and it's a scourge. In my view 20 min. is realistic for that degree of caramelization.

It is strange to me when people cook onions and peppers for the same amount of time. Even gently cooking the onions takes way longer. ..... But I've heard a friend say that they felt the inverse.

This is a Mediterranean dish and very know breakfast in Yemen, the Golf countries, and Turkey. Everyone does variations of this and call it different names too. It’s not A recipe by Melissa Clark. Just like Melissa this was recreated

no one in the civilied world would want to cook it your way though. have you ever considered that your version is limited by poverty, while the western world probably enhanced it with their advanced cooking techniques?

Jiminy Cricket I hope you are joking. You do realize that everyone cooks the same way. Your “advanced cooking techniques” aren’t different from the way this dish is prepared in Italy and Turkey and Northren Africa

NO CANNED TOMATOES. Fresh, chopped, salted well and sweat over heat to create a poaching liquid for the eggs. When the liquid is cooked down, you'll thank me for the explosive intensity of the flavors.

For me, fresh high-quality tomatoes aren't always available. Canned San marzano tomatoes can be quite excellent and always "in season", and helps this still be an excellent weekday evening or low-effort brunch quick dish.

I believe they use canned because it's packed when the tomatoes are at their peak. The rest of us don't always have it in season, and the store bought fresh variety really don't have the robust flavor of fresh garden grown ones.

Looks nice, except for the color of those egg yolks. Maybe organic eggs are better.

I agree on the colour, but they don't have to be organic to look better, be more nutritions, and taste nice-and-eggy. It's a feed thing, yes, but it just has to be not the cheapest feed.

the vegetables are overcooked to the point of being mushy

I prefer it that way. When the vegetables retain their body, it's a little more awkward to eat with bread, with the long pepper and onion strings, without cutting the vegetables into smaller pieces which would be mushy by the time enough liquid cooked down from the tomatoes anyway, IMO.

Why you playing Cuban music when you cooking North African recipe? 🤔 Edit… always use low sugar fresh cut tomatoes… and the feta goes on top (like a saganaki)
