This video demonstrates how to sharpen a ceramic knife using the Work Sharp Knife and Tool Sharpener. A ceramic knife is made from Zirconium Dioxide, also called Zirconia. It is much harder than steel and will stay sharper longer than most steel, but is also brittle and can chip or break. Diamond abrasive belts in two grits, #180 and #1500, are used in sharpening this knife. Only diamond is harder than ceramic, so only these diamond belts will work. Zirconia goes through a phase change when force or heat is applied, therefore it is good to use cooling when working on zirconia. The different phases of zirconia have different sizes and changing phase puts a strain on the material.

FWIW...watched WorkSharp's several videos about this and splurged for your Ken Onion model and diamond belts. It was a curiosity/impulse buy but I've been very pleased. Reasonably priced; easy to understand and use; restored ALL of my ceramic knives to like-new condition quickly and easily. Compared with other expensive and time-consuming alternatives, your machine and method are very impressive.

Hi Doug! Love these instructional videos. I just got my Ken Onion edition this morning. So far, I've sharpened my 9" Rapala fillet knife and my 4" Zyliss paring knife to, what could only be described as "LASER SHARP"! I used a 17 degree angle on both of them with minimal passes - 5 right, and 5 left, then to the progressively finer belts with the same treatment. I'm completely AMAZED by how sharp both these knives have become with such little effort. However, I opened the diamond belts that I ordered and started in on my Kyocera ceramic kitchen knife - and I've hit a wall. I've actually dulled my ceramic knife! I started with the 180 grit and had to do 30 passes per side - TWICE! Then I switched to the 1500 grit and repeated those 30 passes. I'm using a 22.5 degree angle and I'm reasonably certain that my technique is not an issue here considering the results I'd achieved with my other steel-blade knives. Am I doing something wrong with the ceramic knife? Too large an angle? Have I ruined my Kyocera ceramic knife? It's my favorite veggie slicer and I'd hate to think I ruined it! Any suggestions at all would be appreciated. Thanks in advance for your time!

I have a range of decent knives in our home kitchen. Even so I do find myself reaching for the ceramic knife quite often, and I suppose it was inevitable that I'd lose that edge. I wasn't sure if it could be resharpened or not, so thanks to you I'm now all good to go. Thank you.

I bought a ceramic knife in bad shape at my local flea market, it had a broken tip and lots of chips, I reprofiled the tip and took out the chips,sharpened it with a set of cheap Harbor freight diamond sharpeners,it took me about 10 minutes. Good video.

Thanks Doug, beats the hell out of the old ceramic crock sticks. I had not seen one of these little machines at work. Interesting enough to do a Bing. Looks like $70 on ebay with different shipping fees and $80 at Bass Pro with a specialty gift card. I do not think you can buy a fish hook at BP for ten bucks.

i have the Ken Onion edition but can't seem to get my ceramic knifes sharp. they cut paper ok, but when i try to cut a tomato, they just slide across the skin. how can i get the knife sharp so it will cut a tomato?

Hi.... Good video... On 1500 grit diamond belt,you sharpen left-right-left-right... Do you reverse the belt travel for each pass ? Thank you.

No, you don't reverse the belt travel. The sharpener does an equally great job of sharpening on left and right shoulders. Reversing the belt travel isn't necessary, and it isn't possible with any of the Work Sharp sharpeners. This applies to all blades, whether ceramic or steel. The exceptions are serrated knives and gut hooks, which must only be sharpened with the belt traveling away from the edge. The belt will be cut if you travel into the edge with these knives. See your User Guide or my videos for more information. Or test what I'm saying by taking a knife and staying in the right guide with belt moving away from the blade, and switching the direction of your pull for each side. So both sides are then sharpened with the belt moving away from the edge. Then sharpen as we instruct you to do, per the User Guide and videos, so right side has belt moving away, left side has belt moving into. Then compare the sharpness of the two knives. They will be the same, extremely sharp, if you properly raised and then removed your burrs, then honed or stripped the burrs away. It's all in your User Guide and the videos. Very informative. Thank you. BTW, how long have you live in the desert? When I served with the US Army back in 1968, I was stationed at Fort Irwin, Ca. for about three months from October to December. Never realized it could get so cold in the desert at night. How far are you from Fort Irwin?

Good video..... It was nice to see those diamond belts go to work. I know they don't recommend the diamond belts on steel, but I wondered if maybe you have given it a try? I think it's most likely due to the aggressiveness of the diamonds.

I haven't tried using the diamond belts on steel. But I'm sure they'd work just fine. However, the regular belts that come with the Work Sharp (and any other grits that are not diamond) work very well on steel knives and are a lot less expensive than diamond. So for practical reasons, I recommend sticking with non-diamond belts on steel.

It just won't sharpen it, they're much to hard for anything other than diamond grit to shave any material off.

16.5toHeaven Yeah honestly steel is better considering that you're using it to prepare food it's not like you'll come across something that steel wont cut just as easily as ceramic, the only two real advantages that ceramic knifes have are that they don't need to be sharpened as often, and they come very sharp while being cheap to buy. Steel on the other hand is way more durable and you don't always have to worry about breaking it.

ok yea it's all nice n dandy but what about the knife that had a chip what do you do with that ? why didn't you show how you would fix that &take the nick out of it instead ?????

The chipped knife wasn't mine and the owner of the knife decided he didn't want it repaired. Essentially, to remove the chip in this knife you would continue doing sets of 5 strokes on the left, 5 on the right, using the coarse diamond belt until the chip is gone. Then you would go to the fine grit diamond belt and get it sharp. Since this was a very deep chip, you would need to remove a lot of the blade. With ceramic knives like this one, you can also alternate sides using the coarse belt, since you're not looking to raise a burr, which is only possible (but necessary) to do with steel knives.

I'm not a big fan of ceramic knives. There are a lot of amazing high carbide, high stainless steels these days with edge retention as good or better than ceramic knives (simply because they don't chip. ceramic being so hard, the biggest threat to its edge retention are microchips..) So the sharper the ceramic knife is, the thinner that edge is and it will microchip even by hitting the wood board.

You stop the grinder when the tip is in the middle of the belt. If you pull it all the way through. It will round the tip.

Thanks for the guide. Yes, ceramic not good for prying. You might want to take a look at Kyocera knives, does not seem to break easily.

why the motor on/off burst for every stroke? why not just keep it running?

There's a good reason for the on/off burst for every stroke when sharpening any type of knife with the Work Sharp sharpeners. If you run it continuously, in the second or two that it takes for the blade to fully drop down onto the spinning belt, extra metal can be removed, causing a "cupping" in that spot on the blade. It's much better to position the blade on the belt and against the outside shoulder of the guide with the motor off. Then turn the motor on while simultaneously drawing the blade through at an even rate. This way there will be no part of the blade that gets excess sanding, and no cupping will occur. Also, to avoid rounding off the tip of the knife, never draw the tip more than halfway across the spinning belt. So lift the knife off the belt or kill the motor before the tip gets halfway across. 2013 ... hmmm, well, still, thanks for the video. I was left wondering (1) what you advise for those who don't have such a gadget, and (2) why (assuming the gadget belt goes only one direction, and you didn't reverse on us) you sharpened in opposite directions for the 2 sides of the knife--in other words, one side was sharpened 5 times with the grit running OFF the edge of the blade, then 5 times on the other side of the jig, with the grit running ONTO the edge of the blade. You can reverse the belt rotation on some models. The one i have you can(ken onion edition). But it doesnt matter a hell of a lot for the average user, it still gets the job done going in opposite directions even if it isnt perfect in theory If you do t have a worksharp, you may be able to find cheaper diamond sharpeners that will work. Or you could use a diamond plate or even diamond cutring paste on a hard,flat surface like a steel plate, granite or glass. Wood and leather will start to degrade when using diamond paste and give you a convex bevel. I use 325 and 1200 grit Atoma plates and they work great. I find them the best for fast sharpening and feedback. DmT are good also. You could also check Harbor Freight/Princess auto for a cheap one that may work. I am far from an expert but thats just as good an answer as i can give best on my experiences with ceramic blades

It is the only thing to easily cut my carbon fibre ropes. It gets only used for that. But good to see how to sharpen it.

not only AFAYK. a knew knife is cheaper, than the abrasives it would take to fix that blade. and there is little to no difference between $5 knifes from hongkong vendors, and virtually identical $50 "brand name" ones.

If you stop the belt with the tip of the knife in the center of the belt you won't round the tip off don't pull the knife all the way thru

If you can break a ceramic knife with compressive force, you've bought a shitty knife. If you manage to twist or wrench the blade apart, then you're not using it as a knife.

Recently I purchased an 'ERAMIC KNIVES' Online.. Let me tell ya its fuckin' too sharp nd much better then any metal or Steel knive.. It never go dull nd no need for sharping it even after using it for a several many time too. Man it is so cool... Beside any metal nd steel knive have to.

only ignorant people use ceramic knives steel knives are more versatile, easier to maintain & sharpen, more reliable. and steel knives can stay sharp (actually sharper) just as long as a ceramic

Beast of the Far East all good points but i can get a really sharp ceramic knife much cheaper than a sharp straight from Factory steal knife.. so for the price which is very cheap I don't mind having a sharp throwaway knife that makes it every now and again

I've seen a video of a professional chef that used a ceramic knife… but only for cutting lettuce, because steel promotes browning. The only reason why people are impressed by ceramic knives is that they haven't used good steel knives or haven't learned to maintain the edge. (I've also been suckered into buying one, and I've been careless enough to chip it.)

In terms of edge holding on a material that requires toughness like rope or wood or cardboard you are right. In terms of food, i have not tested something like zdp vs ceramic at identical geometry to confirm or deny it. But a six dollar ceramic will stay sharp a billion times longer than a six dollar stainless knife if both are used the same for only food. Idk why or how but food dulls steel. Makes no sense so me how its possible but it does.

I am not ignorant and i use a ceramic knife sometimes when i feel like it. I bought it to try it out and dont want to waste it. I can see the points of it not rusting and being light and its just different. I prefer steel and i can get it much sharper than ceramic much faster and it strops. But how can you argue that if people have a preference that makes them ignorant?

No not really i've had a set for 5 years they are still perfect! no dings just needed a little sharpening, they are really very nice no need to constantly sharpen you just have to know how to use them they are super sharp much sharper the steel and require less sharpening.

Give me a good steel knife anyday! I've used a ceramic knife for years but they just don't compare to even a cheap Kiwi brand steel knife. The blade of the Kyocera is harder than any steel knife I know of but it is such a pain-in-the- _ss to sharpen. t
