Throughout the journey of sharpening, we all faced the same question: “should I buy that XXX grit stone? And maybe the YYY grit as well? Oh, the ZZZ grit looks fantastic as well!”. The process of selecting a stone is daunting and if you have bought every single grit of the available stones already? Oh well, we all have been there.
There are also times that we might just need a particular grit stone for a one-off job, and we happen to not have them. Maybe testing out if a 20K grit stone is great for razors? Or just to fix a (the neighbor’s) really blunt knife with super low grit stone (no, diamond plate cost more than the knife), and purchasing dedicated stone for such job is not financially sensible.

Great advice. I bought an expensive rod system and now after watching your thinning video I am regretting that decision. Should rather have put the money into knives.

I started with glued sandpaper in different grits on a long board. It worked excellent for about a year, and that's how I learned my hand techniques before I got my whetstones.

Coated abrasives are actually ok. I recently went to 3m lapping film glue to glass floats. I collect stones now.

I'm not super rich, just super crazy. I have all of it lol. It's like pokemon, more is better. Even though I have very aggressive low grit stones such as 120 and 320 glass, 220 pro, 220 naniwa traditional the green one, 240 sigma select 2, 220 norton, also 140 atoma. Maybe more I forget. I still choose to use sandpaper very often to do things. For many things it works better and makes more sense. Often it leaves better scratches for which way you want to do it. Also I like to use 60 or 80 grit to do aggressive thinning on certain knives.

James, what grit is the mustard coloured stone in between the 1,000 and 3,000 grit stones? I think I have the same and always thought it was 4,000 (though maybe it's placement in your line up implies it's 2,000 grit)?

The yellowish colored stone is the Chosera 2000 grit. There is no 4000 grit in the chosera line.

What do you think about leather strop for japanese knives please? I baught one but didn't try yet.

a strop wont damage the knife unless you do something REALLY wrong. Give it a try, it you dont like how it performs dont use it.

I think that one more comment to make is that you should buy "good" sandpaper to try this -- "cheap" sandpaper has poor uniformity of grits - spend an extra dollar, and get the better quality paper

Idk about Australia but in the US, there are a lot of countertop places that have free quartz samples. The back side is often smooth and level while the other is a fine mirror polish. I’ve found that using the “abrasive” side is nearly identical to my Suehiro Cerax 1000 as far as loading, slurry and feedback, and the mirror side gives you a beautiful finish and razor sharp edge. I tried it out on my dough/bench scraper and got it paper cutting sharp. Just food for thought.

come on James🙏 Coming from enthusiast, yes this may be enough for home cook with 2 8-12$ knives and no interest in cutlery and zero knowledge of sharpening but not for your audience🤷‍♂️ You say , i have to be super rich to afford few stones!? I live in Indonesia (originaly Swedish) and im barely low middle class but the stone is forever (more and less for the rest of mylife) No you dont have to be rich but youshould be smart and that sand paper will last 1sharpening and zero pleasure from it... Disagree on this one but i understand its not for you nor me

Thinning takes way too much metal. Might as well buy a new knife, or just get good with whetstone sharpening. People who get choppy thick edges probably use it to chop bones and or wood, and probably use manual knife sharpeners. Hand sharpening with whetstones will keep your edge good for years. Edge thinning will decrease your blade very fast. Making sure, you but new knives for sure. Costing even more money.
