Zanzanit shevechi bhaji - dedicated to my bhabi @desai_prachi05 who taught me this. She introduced me to Maharashtrian dishes I had never heard of! Plus, she’s also the reason I was able to marry my husband🥰 I can’t love her more❤️
Ingredients: -
- 1 tbsp oil
- 2 Onions, sliced
- 1/2 cup dried coconut, grated
- 1/2 inch ginger
- 6 to 8 cloves of Garlic
- 3 to 4 red chillies (depends on spiciness)
- 2 tbsp oil
- 1/4 tsp turmeric
- 1 tsp garam masala
- 1/2 tbsp coriander powder
- 1 tsp cumin powder
- thick sev, as required
- coriander leaves, finely chopped
Procedure:
- Fry onions, ginger, garlic in little oil till onions turn brown.
- Add dried coconut and red chillies and roast some more for few mins.
- Grind it into a thick paste with water.
- Heat oil and add all masalas as listed above (turmeric, coriander powder, cumin powder and garam masala)
- Add the onion coconut paste and stir till it leaves oil on sides.
- Add hot water and mix well.
- Add thick sev towards the end (5 mins before serving) and coriander leaves.
Serve hot and enjoy!
