This is called baingan pakora too.. my mom used to make it… but you just changed the shape and a new name…it’s definitely delicious 😋

If I'm not wrong, they cook it in egg batter in the Philippines. But this is indeed a good recipe, specifically for vegetarians/vegans.👍
