Overnight brisket is the only way to cook a brisket! It comes out so juicy and tender, and you still get a good night of sleep 😴
Recipe ⤵️
* Trim a brisket for Texas-style BBQ (there are a ton of KZfaq videos that explain this in detail)
* Season all sides heavily with a 2:1:1 ratio of pepper, Diamond Crystal salt, Lawry’s Salt
* Place it on the @pitboss at 225° F before you go to bed
* After about 8-9 hours (when I wake up), I bump the heat up to 250° and spritz with Worcestershire sauce
* Once the bark is set and the color is where I want it, typically around 175°-180°, I wrap it tightly in butcher paper and then place it back on the grill until it’s probe tender (about 203°-207°)
* Once I pull it off the grill, I let it rest for at least an hour, but my best results come when I let it sit in a 175° (150° if yours goes that low) oven for 4-8 hours. I let the brisket sit at room temp for 30-45 minutes before putting it in the oven
* When you’re ready to eat, pull it out of the oven and let it come down to 150° before slicing
* Right before I slice, I add a touch of beef tallow to the top and then it’s time to dig in!
