Can do this with almost any drink, I accidentally left a bottle of cola in the freezer and it made instant slushi when I opened the cap. The density of gas on top is 1/300 the density of water, and the maximum total cooling from expanding that gas is negligible per atom of liquid. But the pressure drop makes the soda supersaturated with respect to its dissolved CO2, and this CO2 is outgassing from a liquid state to a gas state, and this is a huge gain in entropy. By outgassing the dissolved CO2 into bubbles, each CO2 atom gets a 300-fold increase of available volume to roam, and this can cool the liquid by kTlog(300)≈14eV So you get .25eV per released CO2 molecule, which is comperable to the binding energy of a water molecule. So each outgassed CO2 freezes order 1 H2O, and this freezes a network of filaments of water around the outgassed bubbles, making a slush."

Suggestion: If your winters get below freezing, do it outside, and stay outside when turning it into instant ice. That way the water bottle won’t turn foggy and you can see it freeze much better. If not, keep it in the freezer when you shake it (however this might also get in the way of seeing it).

I grew up in Alaska and basically any drink you leave outside during winter would do this. It was so annoying sometimes, I’d accidentally leave my water bottle outside and I would come get it and then open it and it would freeze as I went to sip it.

Its the pressure waves from the smacking. Normaly water needs a particle to start freezing on. But if you have clear water without bubbles and such, it does'nt freeze. Smacking creates a denser wavefront to freeze on. You can see it in the video as it freezes from the cap down. Please correct me if i'm wrong i want to learn more :).

I accidentally got good at this. Well it's not just Fiji water. It's most water. Ice forms when H2O molecules slow down enough where they can't maintain their own fluidity and become crystalline. So if water is completely still in a freezer and there's no movement to align those crystals then most of the time water will stay a liquid. When you disrupt the liquid it allows those crystals to form and align. Particulates in the water contribute to that and give a point that the ice crystals can align on and bind to, so it does influence it slightly, but it has more to do with crystal production than I specific purity or type of water

“Pure water that it stays liquid under 0 deg celsius.” In chemistry, the more diluted an aqueous solution is with another compound or element, the lower the freezing point.

Btw I live in Fiji and here Fiji water is the only pure water. The tap water here feels worse than tap water from India and sometimes the water is literally mixed with soil while coming out of the tap. I know that it might be a Broken pipe but the muddy water comes almost once every month or even every three weeks.

The water is “supercooled” Did that experiment in High school for a presentation. Getting it right without any help from teachers and recording it was a real pain since it was all done after school.

They actually have vending machines in Japan that do this for you, you buy a bottle of coca cola and once you open the bottle the liquid turns into a slushie before your very eyes

If it doesn't freeze at exactly zero, it is a sign of an impurity (other ingredient which isn't mentioned) and it is usually said that Fiji water in particular is not very pure

You can also do this with soft drinks or even beers... Its a state of supercooling (ie the temperature is sub zero) and impacting the bottle creates a nucleus point for ice to crystallise from. Far easier in glass bottles as they regulate temperature more slowly... Although risk of breaking!

Undercooling is really cool. To make something liquid solidify, you actually have to get it below freezing temperature. This is because they want to be at the lowest energy state, but having a boundary between liquid and solid raises the free energy. This boundary increases by area, while the lowered energy from forming a solid volume increases by the volume. By the square cube law, there is a point where the particle is large enough that it is better for low energy to solidify rather than melt again. Solidification is helped by impurities, which act as nucleation points for solid particles to form.

It’s not just Fiji water. It depends on how long you freeze them. There’s a certain time that it has to be in the freezer. It’s called “super cooling” when you take it out BEFORE it freezes. I watch your videos and know you do a lot video watching to learn something and I see it didn’t happen this time. There’s a lot of KZfaq videos that explains how to do it and the science behind them. 👍🏼

Doesn't have to be Fiji, literally can do it with any liquid. I used to do it with Popsicles all the time. They just have to be freezed for a specific time, long enough to be cold but not long enough to freeze

It happens because water's freezing point is 0° celsius but usual in freezer, it freezes around a temperature less than 0° celsius unless it's disturbed, so if you take water out of the freezer when the temperature is below 0° Celsius, it would still be water, but when disturbed it turns to ice

You can do this with almost any bottled water or liquid in general it’s a point where the molecules are going super slow but actually not initiated the freezing yet because drinks start to freeze at any in fraction in the water so yes it’s probably easier to do with Fiji water but you can do it on any water bottles as well very awesome trick and nice video

I have been able to do this with like a case of water for the last few days with regular Costco water bottles, you can do this with any water, it doesn’t matter how pure it is. I went to work today, driving over ice and snow, I came to work and decided to throw some water in the van, I went to my case of water, thought to myself “I wonder if it will work” I smacked the bottle around a few times and it started turning into slushy, I started pulling bottle after bottle out of the case and it worked everytime, I managed to make some interesting videos. My cousin was so amazed he said he was gosh look this up and show his 6th grade students, i think that’s pretty awesome

Staying liquid below 0 C is the opposite of purity, any and all impurities dissolved in water lower it's freezing point. That's the reason why we salt snow on driveways and car windows to make it melt faster

I've been able to do this quite a few times with my water bottles. You gotta catch it right before the point that it begins to freeze. Also managed to do it with one of those liquid popsicles that you have to freeze. It's tricky and sometimes it takes a few shakes but it's cool to watch and the texture of the ice afterwards is amazing.
