I once brought in a few dozen tamales to work and shared with all my coworkers. The following week I checked in and one coworker said he really liked them but they were a little dry, turns out he ate the three I gave him with the husk and all. 😂

Tamales are one of those things that are easy to get wrong. Even here in the US (California, with a huge Mexican population), you can come across some terrible tamales. Once you find amazing ones, that person becomes your Tamale Lady

What it happens it's that in CA tienen una masa diferente y el método de preparación y fermentado cambia a como se hace en México. Por eso saben desabridos y te lo digo porque vivo a una hora de SD CA. Igual en México no están absueltos los tamaleros, ya que a veces escasean el guiso y usan masa de más y es como comer pura manteca y masa y no sabe a nada. Pero cuando encuentras unos buenos tamales uffffff.

But traditionally like pozole, menudo, birria, mole. Tamales is mainly a xmas/holiday/special occasion food. When u think about tamales u think about xmas
