Note re: shrimp shells - before using, make sure to run under cold water rubbing lightly to purge the sodium preserv. used in frozen shrimp.

Why why why add chicken stock to make shrimp stock? Simply use water, and maybe a bit of white wine.

Andrew's glass is full while Ming is mixing. They likely made a non-alcoholic version for him so they didn't have to explain his sobriety.

Andrew Zimmern is not doing anything new. He's a copy cat capitolizing on the culinary genuis of Black people in New Orleans. Blacks have been originating and varying their southern shrimp recipes for centuries. Whites and Asians have been appropriating Black recipes forever. I find it annoying. YM
