Jim was boiling today on a 2x6 Corsair with Hybrid Pan and Forced Draft. Now, Jim demonstrates how to safely shut down the evaporator with very little sap left in his head tank.
In this scenario, we are boiling in a warm showroom, so we are unable to leave the sap sit in the pans for very long or it would spoil.

Jim: Well I'm gonna boil until 20 min before I want to leave. Me: I want to leave in 3 hrs, I better not add any more wood. Great video! Although there should be a trigger warning at the beginning of this video, warning that Jim's going to mess with the gradient! 😱

Whew!!! as I’ve gotten used to my SmokyLake raised flue I push it during shutdown (especially on wee morning late boils) but this made me nervous 😬 like a nail biting suspense movie 😆. Wonderful company, great people, impeccable products!

Hahaha! Thank you for the fun comment and for the kind words. This procedure might not be for everyone, but it works very well and can be scaled to a more safe level simply by starting the procedure with higher depth. Thank you Thank you Thank you Country Roads Life!!!

Jim great video this helps out a lot.. I would like to see a shut down with a raised flu.. How do you clean the carbon off the bottom of the pan?

I have a question: if you have a hood and pre-heater, is the sap entering the inlet float box hot enough to be sterilized? And if that's the case, does the pre-heater itself become the point where bacteria begins? Thanks for the help and your videos!

Good video. Are you planning on doing a video to explain the end of year final draw off? I’ve got a starcat and I’m trying to figure out how to get the last of the sweet to syrup and off the divided pan… I’ve considered drawing off syrup and putting it in the pan at the back to remove the gradient and finish as a batch. I’ve also considered chasing the syrup with just water, but I’m concerned about loosing syrup at the end. I’d appreciate any suggestions on how best to use your product. Thanks!

Drain it all, mix together and finish it on a propane finisher/pot.

@@joelsanford That’s what I was leaning towards. Its obviously much more controlled. I was trying to get it closer to proper density since I have three batches of sweet (we started cooking 35ish gallons in order to reduce the likelihood of our sap going bad and ended up with about 16.5 gallons of sweet in three batches).

We drained it all and finished it in a stainless steel stock pot on a propane burner. It only took a couple of hours and out of the 4 gallons left in the pain it yielded over 1.5 gallons of syrup.

So do you think flooding a pan/s with raw sap to shutdown your evaporator will cause darker syrup since there would be more bacteria?

No. The raw sap is being introduced to the pans while still very hot. This whole shutdown procedure is based on the principle of killing bacteria. Any bacteria in the raw sap will be neutralized before we walk away.

Those are actually arc welding sleeves. Available at a farm store or welding supplier.

Do you save any “sweet” for tomorrow’s boil?

If we'll definitely be boiling tomorrow morning, we leave the sweet in the pan. If it will be more than 12 hours before we will boil, we drain the sweet out and store it outside, returning it to the evaporator at startup.

Is the concentrate FILTERED ?

No, never. No point in filtering something that is being returned to the evaporator. Filtering such a small amount of product would waste a disproportionate amount of sugar.
