Silvatta kebab is a delectable Indian dish that originates from the region of Kashmir. It is a type of kebab made using minced meat, usually lamb or mutton, mixed with various aromatic spices and herbs.
The kebab mixture is typically shaped around skewers and cooked over charcoal or in a tandoor (clay oven), resulting in a deliciously smoky and flavorful dish.
The name "silvatta" refers to the use of a traditional grinding stone called a sil batta, which is used to grind the spices and herbs to create a fine paste or powder. This method ensures that the spices retain their essential oils and flavors, contributing to the richness of the kebab.
The preparation of silvatta kebab involves marinating the minced meat with a blend of spices such as ginger, garlic, cumin, coriander, cloves, cardamom, cinnamon, and sometimes a touch of saffron. The marinated meat is then shaped onto skewers and grilled to perfection, resulting in a tender and aromatic kebab.
This dish is cherished for its combination of fragrant spices and the smoky flavor imparted during the grilling process. Silvatta kebab is often served with accompaniments like mint chutney, sliced onions, and lemon wedges, adding layers of taste and freshness to the dish.
The origins of silvatta kebab can be traced back to the rich culinary heritage of Kashmiri cuisine, known for its use of flavorful spices and cooking techniques. It is a dish deeply rooted in tradition and is appreciated for its exquisite taste and aromatic appeal, making it a favorite among food enthusiasts both in Kashmir and beyond.
