I would have added garlic along with the butter and olive oil...then rosemary, and little tiny bit of white wine. BUT remember this is only if you dont have anything for your pasta at home and you want a quick fast way to make it like Italian do when they want a fast dinner, this delicious pasta dinner became popular from poor villages in Italy and Sicily. This has now become a delicious delicacy in Italy...we all add our own input into this dish, sometimes we add garlic, or white wine, or oregano, sometimes we just use it like nidia demonstrated. But we All add our Pecorino Romano cheese or Ricotta cheeses. Also side note we also use clams and bacon for this dish too if you have all the ingredients but this topic of dish for nidia is if you dont everything for this dish just easy fast quick way to make a Italian delicacy. All in all its all delicious. I need garlic flavors for me personally. Capellini is been part of my family for centuries. its the full blooded Italian in me. lol although not all Italian dishes needs garlic. There's more to Italian foods than garlic. Nidia is the best of the best of Italian chefs 🍝🍷❤

Not a full blooded italian, my Gramps on my Mom's side came from Alberona, Italy) but am never without garlic, (I grow my own) and use it in so many things. I also agree, Lidia is the best, when I watch her cooking show, it's like I am in the kitchen with my Mom. She is great.

Looks simple yet delicious! Just a question before I try - do we eat the rosemary or we discard them before eating? Wouldn't they taste bitter if we were to chew it?

It takes longer to bring the water to a boil than the actual cooking time of the pasta. And yes, it is extremely easy to overcook capellini and have it start to disintegrate.

How thinner is a capelini from a spaghetti?

GFMRLL almost as thin as angelhair but a lil bit thicker. Cooking time about 4-5mins while spaghetti is 9-10mins.

rachray83 No salt well making the pasta 🙈No,No.. because the pasta is already seasoned with salt, when she boils the water she puts alot salt to salten the pasta water...never ever put salt on your pasta dish well being served...big no no, your pasta should be salted by the water that was boiling so it can season your pasta noodles already. And not all Italian dishes has garlic...me personally would add the garlic along with the the butter and olive oil and a little bit of white wine than rosemary. But this is a easy dish when you don't have everything, that poor Italian villages used from nothing, as a fast quick way foods, some used garlic some didn't. That dish has become a delicacy in Italy.

Nope, the pasta water is a necessary ingredient. The pasta water contains starch which helps to thicken the sauce. It stops the garlic from burning. Furthermore, the connection between the water and the oil causes it to emulsify and become the sauce. The pasta, when added to the pan undercooked, will absorb all of the sauce and its flavor as it finishes cooking in it. The water and the pasta itself also should be well salted so there's flavor enhancement there. You won't lose any flavor unless you were to drain the pasta fully and rinse it in the sink, which some people do, and that's entirely wrong. Not to worry, the sauce develops and remains nice and smooth as it should, not watery at all.

The pasta water would be well salted. Likewise the cheese would be salty. No need to add extra.
