Singapore hokkien prawn mee is basically a slightly wet noodles mixed beehoon stir fry dish with very aromatic mixed prawn and pork broth. It has a very strong eggy taste to it and the noodles have some tinge of charred flavour to it. Not commonly found in KL but there are people selling it.

Singapore Hokkien Prawn Mee
Ingredients:
250g of yellow noodle
50g of bee hoon
3 chicken eggs
Some prawns
1 bowl of bean sprout (taugeh)
Some chives
1 tablespoon of chopped garlic
A few slices of gingers
Broth:
Some prawn shells
1 big bowl of chicken stock (2 teaspoons of Ah Pa’s chicken powder mix with hot water)
Seasonings:
Pinch of salt
Pinch of sugar
Few drops of Ong Ky premium fish sauce
Few dashes of white pepper

thanks ah pa, this makes singaporean hokkien mee look so achievable! i got one question sir - have u tried hexclad? is it worth it? seems like it may help u get the char for this dish.

Honeycomb wok? I got one when it first came out few years ago, the non stick coating doesn’t last, so i no longer use it. Personally i am not overly concerned over the char flavour in this dish.

What Chili do you use?

For convenient sake, i just use any chili oil i found in my fridge, perhaps it’s from Lee Kum Kee. The hawker will normally use cili giring and sauté it with oil and probably adding in some garlic and opinions or just plain sautéed.
