I have come to affectionately call this the "bastard whisky" and I am FINALLY doing the spirit run!
I'm using my home made CCVM still in pot still mode. The awesome viewers have given me a whole lot of feedback that I explain and put into practice as well.

Just finish 4th and final strip run, 4- 10 gallon mashes, of a Maine Single Malt Whiskey. Sour mashed last 3. 100 lbs Blue Ox Vyenna Barley got me 4 gallons 3 qts strip. Will low slow the spirit run. Barrel ocean age. Now I know why Single Malts are pricey. Thank you for great tutorials. Cheers from Maine.

of course I now have to brew and distill my own "scotch" -inspired whiskey. I LOVE Laphroaig...and all Islay scotches, for that matter. I am super-stoked you did this series and you have inspired me. I live in the states and of course, it isn't legal for me to pursue spirit distillation, but I have always been a rebel at heart. Good on ya! glad to have these videos to help me on my journey!!!

If you are long term aging take wide cuts, if you want to drink it sooner rather than later take the minimal approach.

Ah, awesome. He definitely did me a solid there! The law situation in the USA is rather sad. I really hope it changes sometime soon. It would be a huge benefit for the hobby. Where are you apprenticing?

Coming over from the Whiskey Vault. Great videos brother. Just saw your blending video. Keep it simple! The orange peels were a great idea. I think the coffee maybe a bit overboard. Maybe some coriander and nutmeg to compliment the peel.

ive been running a half ass single malt, and by that i mean roughly 60% pale malt, the other 40% is crushed/ground pearled barley. to which i also added 2lb/ gallon of mash sugar. well, I'm new to this as well, using an "improvised" sill gas fired 10 gal boiler out to 1", into a ss stock pot thumper, out to 1/2" inside of a 1" water jacket. straight pumping ice water the entire run. low and slow run and at the end of the day I'm pulling 5 quarts per 8 gallon run with about a pint of what i call tails which won't hold a decent flame, the head is low on the break and its over. the smells you are describing seem to be right on with what my senses are telling me. I'm hot and tingly out the gate, but about a quart into the run it mellows and smooths into an earthy/woodsy taste, a little sweeter on the ass end, and the tingly mouth feel all but gone. it holds varying degrees of tingle throughout and the slight sweet grain turns to the smoky taste you mentioned. ever increasing until I'm having to "warm" the sample in my spoon before it lights up. by then I'm creating up on 190+ at the top of the liquid and cloudiness starts sneaking in. around 190 I've been cranking the flame and pushing what tails are left and liquid temp is borderline 200. i kill it then if not before. realize my lingo is perhaps incorrect, but i hope my simplistic description can help someone like myself, very new to the process? I'm learning everyday and that is the point i think? its my point anyways. this whole thing is bigger than alcohol alone. petroleum and many other products are produced in this manner and thats why my 14 yr old son is participating on a very minor level rather he likes it or not. carry on my good Sir. i appreciate your videos, sensible and down to earth. thank you my friend.

the pearled barley is about all that is available here in the SE US. i believe all these health nuts have driven the price of "fodder" to astronomical rates. they grow it to sprouts and juice it to add to a smoothie i assume?? so, if it can sprout its stupid expensive because of those grass drinking fools. i would like to get into making my own malts. for all practical purposes even the peated malt. there"s a history lesson in there somewhere. in this country its near impossible to get a seed with a husk. genetic engineering on such commodity plants, especially corn is silly with lawsuits and copyright infringement non sense. thats how goes it. I'm still working on it and will pursue my malts. $30 for 10 pounds of malt is just too much considering scotch is suppose to be 100% malt. even now it cost me around $80 to mash in on a 12 gal run. keep up the good fight and we will figure something out to level the playing field.

+Josh Casey yeah the price of all grain scotch is bonkers eh! But yeah I guess you need to use what you can find at a decent price. I found flaked barley (unmalted) cheap. So iay try a scotch/Irish mix up some time soon.

I came from the Whiskey Vault, which I got to from the Modern Rogue. I'm in the US, so unfortunately I can't do any distilling... well legally... Anyway, I still have been enjoying watching you do your thing and experiment with distillation.

now comes the fun part. blending and putting it on oak. listen to bigedsguns. i use oak staves 10mm x 2.5 x 2.5 i toast them on the grill and then char them. i also like to toss in a stave of cherry or apple. but i think you did an awesome job. now you just need a container big enough. make sure you do reference samples as it ages. that way you'll know for future .

Another great video Jessie interesting to see how it turns out, I would love to see you do a rum video & different spiced recipes. I did my 1st successful run just recently & worked out quite well using essences but I was just guessing on the cuts. Off the still It was fairly fruity but the ethanol smell was fairly aggressive & overpowering compared to commercial brands, I'm wondering if more molasses would balance this. It would be great to see you try this sometime soon, Keep up the good work.

Still It Yeah I probably did start the cut a bit too early but thats where I found a lot of the fruity tones. 1 thing I did notice was there was a difference between the 1st stripping run & the 2nd the 1st was very fruity the 2nd was more towards the ethanol. Both washes were the exact same mix the only difference was the 2nd had an extra day fermentation, the next time I will clear them both at the same time. I will let you know how it goes when I do it & I will keep an eye out when you get around to trying it yourself.

Still It Hey I should have said I probably did go too far into the head cuts with the blend but i see you guessed thats what I was meaning, both stripping runs ran exactly the same ( t500 alembic ) The spirit run was different it took a while for the temp to graduate once the distillate started & was warm at first but did cool eventually. I read on a forum yesterday that someone said to put some molasses or dry molasses baking powder in the boiler & run it for more flavour so I will give that a try on my next run.

Would be interesting how do you strip run all grain mashes? Do you distill on the grain or you filter the mash? Do you have stirrer in the pot or use oil/steam/glycol bath? I use thumper and I have a new idea: put liquid in boiler and solids in thumper.

Well if the smells are giving you the willies try running them through a activated charcoal filter and see if that clears those smells. I myself run every drop through three filters before I'm done. Filtering it does help take out some of the bad elements out of it.

But honestly I would rather just leave that jar out and use it for something else down the road. After working hard to get flavours in there I feel a bit average about indiscriminately killing off flavour and aroma.

what wood will you use to flavor single malt? im partial to glenfiddich 12, its yellow, not brown. is that a light toast?

1kg of Manuka smoked sounds very light to be getting any smoke flavour thru. The smoke definitely hides way down there in the tails, tho'.

There was cherry smoked malt in there too. But even down in the tails I had to really go hunting for it. Subtle but I could pick it up ( or at least I thought I could haha)

Hey Jesse I was reading an article about how ardbeg uses seaweed and heather flowers along with peat..i was wondering if you or anyone else for that matter know whether they used the flower and seaweed during fermentation or during distillation like a gin basket type process? Thanks.

mikey landon.. that depends. what was the temp. when you mashed it ? if you were above 170F. you pretty much killed the action of the amylase enzyme in your malt. if below 150f. it won't work. 165f is where you want to be.

I cant suggest anyone specific sorry. So far I have had pretty much good experiences (other than when I knew I was buying something that looked a little dodge/too good to be true). The quality overall on that platform is really picking up. Plenty of people will argue against it though haha

Enjoying your vids. When you are running in pot mode what is the vapor temperature at the transition points from heads to hearts? I am trying to transition from a reflux mindset and the 2-propanol that comes off at ~180F seems to be in the middle of a pot run.

+highlander2809 yeah the smearing just seems to go on forever compared to reflux huh. Honestly I don't even have a thermometer installed yet haha. I will definitely get one sorted for reflux though. In any case I'm kinda trying to do all my cuts etc by my sense. At least untill I get used to my set up and get it dialed in :)

I think that is the way you should may your cuts especially if you have a good nose/palate, which it seems you do. interesting watching you pick up the different aromas and tastes. if i am seeing correctly it looks like your first jar was at 74% ABV which would generally put you about at 185F as temp and ABV are generally related. at that temp/abv any 2-propanol should have come out before. I assume that you did not run any reflux at the beginning of the run to equalize and pull off fores and just did full put mode. I will keep watching.

From memory that sounds about right, after blending it ended up at 60%. Yeah I could see my self easily slipping into being lazy and just doing it by the numbers. So in the end I decided to just stay away from that.

Take some hearts and age them with an oak stave. But also save a sample of that cut and do not age it. Let it age for 6 months and then do another comparison of the aged vs the "white". And for christsakes save some to celebrate with WHEN you land your new job! Cheers Jessie! PS Might not be a bad time to start thinking about macerating some white whiskey with cinnamon, peppermint, or berries for celebratory drinks around Christmas and New Years. Pick your flavor the recipes are out there.

Sorry another question. You seem to be getting somewhat serious. Have you thought about sliding a better grain as apposed to feed grade? Or long term is your goal to perfect the cheaper grain? Or is that the only corn you can get due to your live talk last night it seems that may be the issue....no?

6qt was what I got my first run 140 from start to finish... hearts. 1 1/2 gallon drinks able 1 1/2 rerun .

Still It yep made my first cut just had her drip backed off real slow made cut then stripped her.. after that next run slow and took 7 hrs in my pot still with Thumper..love the keg for now triclamp 2 ft of 2 inch with a rubber stopper and 3/8 20 feet 10 ft be condenser.used a lime and Apple in Thumper should have used 1/4 of a lime...think with age it would mellow more.

Question is setback and “Dunder” the same thing? Any plans on a thumper if your going to do a lot of whiskies?

+jonathan hooten yep thinking perhaps a in line thumper. And dunder generally refers to a ongoing "live" goop. Where as back set is right out of the still.

Do flavors from fermentation come through to the final product? I know the banana come from certain yeasts being fermented at too high a temperature and the same thing with the bandaid smells/tastes in beer making. Thanks

I have to believe that at least SOME do. I see no reason they would not. Yep, I am actually in the process of trying to get more banana out of my yeast for rum.

Still It lots of home brewers purposely get more banana in their Hefeweizens by under pitching and fermenting a little higher than the average recommended. A hefe yeast like white labs WL300 would help

Cheers man. I am using a safale strain known for it's banana right now. Fermenting higher at 25c. Will see how it goes ;) it's all in the newest vids on rum if you are interested 🥃

Hey Jessie i have a question, I done my alcohol cleaning run today and it came out cloudy. I had no intention of keeping it so i just collected it in a single 5L glass jar so i dont know if it cleared up after a while, I regret not using small jars now but hindsight is a b***h lol. Have u come into this when doing your cleaning or stripping runs? Im sure im worrying for no reason but some insight would be appreciated. It started off at 62% and i ran it till about 35% abv. yeah dude that hindsight will get you! haha So this was a cleaning run? It could have been some of the stuff that came out of the still due to this being a first run. I cant think exactly what that would be. In normal operation I would think cloudiness is normally from either puking (basically the wash boiling over) or the oily stuff from the tails making its way in.

I think i'v worked it out lol, it was just a sugar wash but i had a 500ml jar of molasses that was about to go out of date so i put that in too. I think it is a pectin haze, I didnt know u had to use pectic enzyme with molasses i thought it was just fruit, Well u learn something every day LOL

I was under the impression that you only need to pull about 200ml or so of foreshots on a volume around your amount. Am I wrong or were you just trying to play it safe? I swear my first jar is always somewhere around 85% or so...

+Daniel Regueira it was a little over 100l of wash before stripping. And didn't take heads of while stripping. But yeah I took more than I needed too. There was no way I was going to be using that first bit anyway. Guess I could have saved some for feints. But eh, not too stressed about volume :)

Hi I’m just about to start distilling and I was wondering as to why we have to do a stripping run I was going to use a Peated malt I wanted to keep as much of that flavouring as possible therefore didn’t really want to strip out too much of that flavour can it be done on one run. Thanks Ed

+edward pearman it's more about the control that the still gives you. Can you get your 80% (or whatever abv you are aiming for) without a stripping run? If my still is in pot mode then I can not.

+sammy Fox hows it :). As far as I can tell sour mash is more of a bourbon thing. But, I did keep some backset.....and I do have a sack of kibbled maize.....

Hallo, from Romania. You Say You have 16 abv? But OG was 1,061 ?! So, you will have maximum 8 abv. Am I wrong?

Sorry, now I realized that 16 percent abv you had after the first distillation, not before. Usually I distill a "wine" with about 6 ° abv. Then at the second distillation, about 25-30 ° C. So, I misunderstood.

I think you misunderstood I just love the descriptions , your not the only one who does that. All the channels do. Just goofing around. Cool vids as a home brewer I’m considering making the plunge into this hoppy ... probably not at the scale you do but like a 8 gallon still for 5 gallons of wash.
