This is my 3rd or 4th video and I feel the same....his recipes are simple, flavorful and pretty healthy IMO (not just the vegetarian ones). My only question is "where's the mushrooms"? Lol, lol..😄

Pasta Primavera has always been a epic fail for me. 🤷🏻‍♀️Every once in a blue moon, 🌚 I’ll try it again…I think I’ll try yours’ this time Chef Jim. I’m loving the step by step format and after all, you’re THE BOSS…lol!! Thank you for sharing this one. I can never get my sauce here to catch a lot of flavor! Hoping this is time for changing that!

There is also dealcoholized wine (and beer). Check though, some is just extremely low % (0.5%), some is truly 0%. Still has the other components of the wine for flavour though.

Wow, that looks like a amazing pan of Pasta Primavera, you’ve seriously outdone yourself! I used to live in Manchester, England in a town called Salford... You’re absolutely right English Peas are amazing and it’s because of their high starch content. What’s really funny a lot of the British Recipes for “Peas” they mash or purée them up! My favorite was Minted Mushy Peas. James is doing a wonderful job of being your Taste Tester, he’s very articulate and honest and cute! 👍🏼👏🏼👏🏼👏🏼

my first experience with minty peas was with my friend that has since passed. she introduced me to English tea with all the wonderful goodies, but the minty peas served in phyllo cups was so memorable I made it the following week for her and it is one of my favorite memories of her sharing such goodness and simplicity with me.

I do kind of a variation only I use what I call "roasted vegetables", vegetables of choice on a sheet pan very high heat, fresh garlic, olive oil, sprinkling of cracked red pepper, basil, oregano, roast them very high heat so that the vegetables become seared, ( adds AWESOME flavor) but not completely cooked, they still have a firm texture and then toss them with pasta of choice, I like to use fettuccine, it's good, my kids are all grown, but they still request it

I've made it my mission to make one of your dishes each week to improve my culinary skills to match the rest of my family. I made this dish today (I did the butter tomato last week) and it turned out amazing!! I LOVE the veggies with the creamy sauce. ❤ I subbed the broccolini for brussel sprouts cuz I love them more and oh my gosh!! My mother really liked it too. Thanks again!! 😊

I made this today and it was absolutely delicious, thank you for the recipe! I was unable to get green asparagus, so I used mushrooms instead. I stir fried them first until they were soft and all the water had evaporated, set them aside and proceeded with the rest of the veggies. I tasted very good!!!

FWIW, I use a good quality dry white vermouth for a lot of sauces like this, because it's cheaper than an equivalent quality of wine, and it keeps well in the fridge. A trick I learned from a French chef (not all of them are purists). If someone doesn't want to use alcohol, they might want to add a tiny splash of something acid like lemon, along with the pasta water you mention.

I always save about 2 cups of pasta water if I have leftover pasta dishes that use it I wrap it tightly & refrigerate it. Then I have enough to add during reheat. If I could save a whole pot of pasta water in the freezer I would!

The alcohol quickly evaporates under even mild heat. Leave a glass of wine out over night, and it will taste flat in the morning , because the alcohol has evaporated during the night. I love your son’s comments!

Looks delicious!!!! When your family begs you to make some hard boiled eggs, try gently injecting a few ccs of melted butter into eggs with a hypodermic syringe and needle just before boiling them.. You'll be amazed at the results. Believe it or not, the small hole that's created from the injection also helps stabilize the pressure that builds up in the egg during the boiling process and helps avoid the shell cracking and the contents leaking into the water. Once the eggs have boiled for 10 minutes, rinse them in cold water from the sink and gently place them in a small pot of ice water. After they've soaked in the ice water for about 3 to 5 minutes, peel them under another stream of cold water from the sink. You'll be surprised how easily the shell separates from the albumen when the egg is extra cold. Now enjoy some extra buttery hard boiled eggs with a little salt. Finally, go ahead and grind the shells in the garbage disposal. Eggshells actually serve to sharpen the blades.

"Use what it needs" is what I wish more people understood. There aren't really exact quantities for things like veg; all sorts of different shapes and sizes. Cooking is a living, breathing thing. Use your senses and feel it out. Great looking recipe!

New subbie here. I want to say that I have watched many many cooking videos for years and I love how you chop your vegetables very briefly as opposed to filming the complete chopping process. For me it really makes the video more lively and fun to watch. We all know how to chop and I like how your presentation of all the chopped and prepared ingredients comes into play. thank you so much for your time and effort. Wow, this looks like a home run, can't wait to make it!! The taster is growing by the week!! I was wondering about the sauce as well... I see why you dont want a thick, heavy sauce. I may bump up the paste and cream and see what happens.... awesome video!!

I love pasta dishes that help me get more veg into my diet (especially when it includes Broccolini!) - and I really like the way the veg looks with the large sized rigatoni - will definitely be making this
