Ingredients:
4 Cups Rice
3 Big Red Bell Peppers (Tatashe)
1 Can of Plum Tomatoes/ 5 Medium Size Tomatoes
3 Scotch Bonnet (Ata Rodo)
3 cups Beef or Chicken Stock
120g Tomato Paste
2 Onions
150ml Cooking oil
4 Tbsp Butter
3cm Ginger Root
2 tbsp Curry powder and Thyme
Bouillon cubes
1.5 tbsp White pepper
3 Bay Leaves
1 Medium Size Tomato for Garnishing
1 Small Onion for Garnishing
Salt to Taste

Cooked this and served to mother in-law and sister in-laws they absolutely loved it, I'm a Jamaican and hubs is from Ghana, this was my first attempt ever at Jolloff and they said that I actually cook it better than them and they all had 2nd or 3rd servings of the rice! @@thatgingerjay but this a Nigerian version. Every west African country has their on way of cooking their food and It doesn't taste the same . This is Nigerian jollof rice.

This recipe is lit! This is jollof rice with a difference!! Following your tip of turning the rice after 15 minutes to minimise the burnt quantity and adding butter gave me the best jollof rice I have made ... big ups!! 👏

Thank you so much for sharing this recipe I am running to the store RIGHT NOW!! I typed out the ingredients in order of use and instructions I hope this is helpful. Ingredients: - [ ] 2 Onions - [ ] 2 tbsp Curry powder and Thyme - [ ] Bouillon cubes - [ ] 1 Paprika Pepper - [ ] 3 Bell Peppers - [ ] 2 Sm Onions - [ ] 3 Scotch Bonnet Peppers - [ ] 1 Can of Plum tomatoes - [ ] Ginger Root OR 5 tomatoes & Ginger - [ ] 1.5 tbsp White pepper - [ ] 3 Bay Leaves - [ ] 4 Cups Rice of long grain parboiled golden sella basmati rice - [ ] Vegetable oil - [ ] Garlic - [ ] 120g Tomato Paste - [ ] 3 cups Stock - [ ] 4 Tbsp Butter - [ ] 1 Medium Size Tomato for Garnishing - [ ] 1 Small Onion for Garnishing Instructions: Season meat with blended onions, bouillon, thyme, curry powder and salt. Let marinate over night or for 2 hours On low - medium simmer for 20 minutes, Add water cover and cook til soft, once meat is finished remove meat and save broth for later. Blend Pepper mix On med add pepper mix, thyme, bouillon, white pepper, Curry powder and bay leaves cover for 15 - 20 min and set aside Add vegetable oil, onion, garlic and thyme to a pan for 2 -3 minutes then add meat, Transfer meat to a plate once fried Add more onions to the oil fry for 2 - 3 minutes add tomato paste until fully fried, then add to pepper mix until fried, then add meat broth, water as need and let cook, then add washed rice, Add salt to flavor. Cover with foil cook for 15 minutes, mix and cover again for about 10 minutes. Stir again, but not to raise up burnt rice Add butter, tomato and onion and cook for 5 minutes and add meat Simmer for about 5 more minutes Serve !!

I made this for Mother’s Day and it turned out sooooo good. I added chopped plantains, shrimps and mixed peppers in it as well and it was absolutely amazing. Thank you so much for this recipe.

😆😆😆 you are oo. Come let me tell you one secret in your ear; don't tell anyone ooo. Oya listen: I burn the tomato paste small then I cook mine on low heat after the first boil and the rice has absorbed water. Second method for smokey flavor, when the rice is nearly done, I blend green bell peppers and stir it in for extra smokiness... try it sometime

I always prided myself as an excellent Nigerian jollof rice cook but I never really tried frying the tomato paste separately.. i think I just might remake this on my channel🤔.. i can already taste this from your screen Sisi me! It looks amazing and the color is just 😍!

This was a fantastic guide! I made jollof with goat meat yesterday but I didn't mix the goat with the rice or add butter, but I think ill try it next time.

That looks so good. I would be too intimidated to make/cook that recipe. Especially the rice. The first time I've had Jollof rice was years ago, and it was good. Thanks for sharing another great recipe.

I'm from Sierra Leone, and I've seen a lot of Nigerian cooking on KZfaq, but yours is the only one I've subscribe to. Your cooking is special. And it looks delicious. This jollof is the bomb😘😘😘. Most nigerian jollof looks like rice cook with tomato 🤮
