Slap Yo Lunch Lady Sloppy Joes is the only recipe you’ll need to satisfy your inner child.
Ingredients:
- 1 Yellow Onion, Finely Diced
- 1 Red Bell Pepper, Finely Diced
- 1 Jalapeno, Finely Diced
- 3 Garlic Cloves, Minced
- 1 Tablespoon Worcestershire Sacue
- 1 ½ Teaspoon Yellow Mustard
- 15 Ounces Tomato Sauce
- 1 Tablespoon Brown Sugar
- 1 Tablespoon Molasses
- 1 Teaspoon Smoked Paprika
- 1 Teaspoon Chili Powder
- 2 Tablespoons Olive Oil
- 1 Pound Ground Beef
- ¼ Cup Beef Stock, To Adjust Consistency
Directions:
- Finely dice the onion, red bell pepper, jalapeno, and mince the garlic.
- In small bowl, combine the Worcestershire sauce, yellow mustard, tomato sauce, brown sugar, molasses, smoked paprika, and chili powder.
- In a large skillet over medium high heat, add the olive oil, onion and red bell pepper. Season to taste with salt and pepper. Sweat the onion and red bell pepper until soft, about 3-5 minutes.
- Add the jalapeno and garlic to the skillet and cook for 1 minute longer.
- Add the ground beef and cook until nearly browned.
- Add the sloppy joe sauce to the skillet and mix to combine. Let the sloppy joe filling simmer for 10 minutes to marry the flavors. Adjust the consistency of the filling with beef stock to your liking.
- Spoon the filling onto a buttered, toasted brioche bun and serve with kettle chips or a nice coleslaw.
