Tip for dicing onions- Hold at the root and cut slices going towards the root(top to bottom). Then flip vertically so the root is on the bottom and slice downward toward the root, rotate the onion by 90 degress and slice towards the root. Turn onion back to the side and start slicing on the end horizontally(going parallel to the root). Sounds complicated but its easy! It cuts down the amount of tears you produce and dices them very nice the on first go.

This was actually a bit painful for me to watch. That being said, I'm leaving a sauce recipe here for anyone using only mayo and/or mustard on their potato and pasta salads. Basic Sauce Recipe: Ingredients - 1 jar of mayo, 1 egg, 1/8-1/4 cup mustard (depends on taste preferences), 1/4 cup vinegar, 1/2 sugar, salt and pepper to taste Directions: 1. Mix half the jar of mayo with all other ingredients in a pan 2. Cook on stovetop until thickening begins 3. Remove from heat and whisk in remaining mayo 4. Let cool, then put into salad Notes: 1. Spices always get added when I make this, but I figured that'd be best added as a note. Some favorite spices for me are curry powder, chilli powder, crushed or ground hot peppers (my family has a special mix of home grown hot peppers, but store bought red are enough for most people), paprika, beet or regular horseradish (the bottled sauce made with mayo is also good), and garlic. 2. Extra sauce can be kept in the fridge for up to a month. I even occasionally use this as a dipping sauce for meat (especially chicken) and fries. 3. I prefer a bit of a thicker sauce than this provides for potato salad, so I tend to mash up a few potatoes as a thickener. 4. For reference, this sauce recipe is enough for me when I use about 8 pounds of potatoes and 3 dozen eggs on potato salad, sometimes even leaving a bit extra.
