Could have used vanilla shaders (not optifine, Mojang added its own limited version of shaders to the game) to desaturate any matching color, which would mean there would be no missing blocks, it would affect their Minecraft skins, and would mean there would be no broken animated textures. (The last part could have been done with the way you implemented it, because it was caused by not giving the grayscaled textures a mcmeta file, which is what allows textures to be animated textures)
