Amazing tasting chicken recipe and so much fun to eat. The cook is easy. The hardest part is the prep, but it is worth the effort.
Trim top of chicken leg so it stands up
Cut where the skin starts to thicken up on the bone and peel back skin off the knuckle.
Push meat down to the end on the drumstick making it into a “lollipop “!
Season chicken. I used Pitboss sweet heat rub and suckle busters SPG.
Wrap in bacon.
Season again. I used suckle busters hog Waller.
Put in smoker at 300 degrees until it is about 155-160 IT. About 1 1/2 hours
Glaze the chicken.
My glaze consists of Carolina bbq sauce, franks red hot, and brown sugar. Mix together on low/medium heat until mixed well
Put glazed chicken back on for 15-30 minutes. Just watch it so that you don’t burn the glaze. You just want it to caramelize. Take it to the kitchen and ENJOY! 👍🏻👍🏻
