Thanks for the video. I'm looking at doing a flat for my first brisket (well second, but I don't talk about the first). What was the overall cook time not including your 90-minute rest in the cooler?

I don’t recall the cook time but each cook is different anyways and I’ve found if you let it cook till it hits around 205 internal temp in middle of brisket it will usually be right on. Depending on weather, size of brisket, how hot you keep the pit and other factors will greatly change a cook time. Hope that helps.
