Along with the Kettle Zone Cooking System and the Weber lid with the centered exhaust I'm really feeling this might be the optimal setup !😎👍

I cannot believe this video this is incredible! I'm a retired ship's Captain with 33 years at sea, one of my all-time favorites was when the stewards Department would whomp up a bunch of oxtails. A lot of people don't realize what a delicacy this is. Just got my Weber Smokey Mountain few weeks ago so far I've done two briskets on it I cannot get over how incredible the Weber Smokey Mountain is. I guess my next step will be to try to find some oxtails around here in New England. Keep up the videos, you rock man! I don't have a kettle I'll be using the Weber Smokey Mountain. If you read this anything should be done differently? I wouldn't think so but just in case. All the best. Take care.

I am on the fence about pulling the trigger on the Aura.... I wish they would have made the "feet" a full circle so they wouldn't have the possibility of rotating off of the pegs and dropping down.

The first BBQ oxtail video I've seen, looks like burnt ends, my one of two favorite cut of the cow, you will have to do a cow tongue now! I definitely will have to try this!

Nice Setup ox tails came out great. I've been seeing beef shanks I need to try both. I just picked up a 12 qt cast iron camp oven, I want to try it instead of aluminum. I want to see how it works with pork butts too.

The shanks would be awesome! Would have more meat. However the fat on the oxtails are super rich! You notice I didn't trim any. 😁

I've never seen oxtails at Costco. 'Round these parts all we get is dead animals from the zoo. Great cook. Had to chuckle when you flung the rest of the seasoning away.

So I was using the charcoal ring from the 22" Weber Smokey Mountain. I just like how it keeps the charcoal off the walls.

I think the WSM handles temperatures really well on its own but the TTT would really keep it nice and steady if you're having temperature issues. I would definitely try it! Great question Fly! 😎👍

I just got gifted some oxtails and was searching for videos (because I’ve never even tasted them, much less smoked them). Great video, that finished product looked amazing! Can I ask you two questions? 1). Did you do an internal temp check when you put them in the pan (and what was it)? And 2). What was the “done” temperature?

So the finished temp was around 200°fahrenheit.. I don't remember what the temp was before I put them in the pan but the most important thing is giving the oxtails enough time to be in the smoke. What I recommend is when you transfer the oxtails to the pan add a can of beef broth to the pan to braise the meat in. Thanks for watching! 😎👍

That’s the Aura Kettle Zone Attachment. It’s a diffuser that keeps the direct heat away from the food. The crazy part is sometimes the meat is done faster due the the radiant heat coming off the ceramic moons.

Finally got to use my Aura and Tip Top Temp together a few days ago! Cooked some ribs and they turned out great. First time with the Aura and second with the Tip Top and they worked great together, highly recommend! Thanks! Do you recommend the Minion method vs snake?

When using the Aura it’s best to use the minion method so the heat is coming from the center and working its way outward.
