3/4 cup salt
3 cups dark brown sugar
17 hours in the brine. Rotate fish once
Smoke 110-140 degrees no more than 150
5-7 hours

Chinook, Kokanee, coho and many other species will except the brine different needing more or less time in the brine. the smoke time will also be different, longer for thicker filets and shorter for smaller
