Today we are looking at mods that I made to my Oklahoma Joe smoker. My mods were done on a Longhorn reverse flow model. However, you can do these mods to any Oklahoma Joe with the right kit and parts. All are provided below in the links. Thank you for the suggestion of the tap oil. Just drilled out the side of my Longhorn for that same grommet and the oil definitely saved the bit!! This video is one of my faves for the Oklahoma Joe's smokers!!

The baffle plates are the best mod I've done for my Oklahoma Joe smoker. This simple mod stopped all the burning and inconsistent heat areas in the smoke chamber, as well as providing great moisture with the water pan right next to the fire box.

I've been meaning to drill holes into the baffle to make our flush with the cook chamber. Thanks for the tip about the drill oil.

I have a very similar setup. I have not yet made a hole for my wires but I will do so soon. I am a stick burner so I can blend my woods for the meat I am cooking. The most important modification I did is to put in a temperature controlled fan system. I use the one from Amber Instruments out of Atlanta. My buddy has been using one for about 6-8 years. The beauty is that fan system allows very tight temperature control in your smoke chambers. Additionally you will use about 1/3 of the amount of wood (or charcoal). With my system, the temperature varies only about 1-2 degrees during the cook. I was seasoning my new grill last week and I used less than two 8” length 5” diameter logs along with a 3/4 full starter chimney of kindling. It held temperature for two hours at 180 and four hours at 250. I started with one of my “logs” and about four hours in I added the second. I will also mention that I was able to modify my firebox opening to fit the fan by simply adding a steel electrical cover for a square electrical box. I also sealed my firebox to limit any air entering the box except through the fan. Have precise temperature control allows as close to consistently perfect cooks as can be done. I also have a wireless temperature alarm should my fuel run below what I need to maintain temperature.

My wife wants to get more one of these for Father's Day since our old pit basically fell apart after nearly 10 years. My jaw dropped hearing you say a $300 smoker... Damn things are $650-700 now.

The baffle plate you're running is for standard flow. They make a solid plate for reverse flow.

Looks like you used some felt tape to seal the lid on the cooker. What are you using? I tried one in the past but the adhesive was weak and it came right off. It looks like you have a nice tight seal there.

Nice vid there. I have the OK Joe's Highland (not reverse flow) I purchased last summer and did some mods almost the same as you did. Really, the only thing I did different was have the firebox halves welded together then welded onto the cook chamber. The one thing it did eliminate was having to drill out the deflector plate and bolt it in and it doesn't leak much smoke at all. I have a slideshow on my channel. I Subbed since I too love smoking. I don't weld either however, I located a local welder who lives about 5 miles from me, brought the pieces over and he welded them up for me. He charged me $50.00 and I thought it was worth it. I live in rural Vermont and I was dang lucky to find a local welder. Cheers!

I did all the prep work in my shop by grinding the paint off the to-be welded seams and thoroughly cleaned and degreased them. The smoker was brand new and not assembled. Yep, I voided the warranty, lol.

Since the firebox is the primary point of failure for one of these, is it really a good idea to weld it up? I'm thinking replacement will be much easier if I don't weld it. I welcome any comments.

How to fix a Oklahoma Joe's pit. 1. weld fire box together. 2. install a 6 1/4" stack at grate level. 3. smoke something to eat!

I just got my Highland. Did all the same mods. I put 1000 degree gaskets around the firebox into the smoke chamber and on the firebox door. Did the burn in tonight and my door is leaking on the left side. I got two door clamps, but think I’ll only need one on the bottom.

10 to 15 degrees is not anywhere close! I’m not trying to say what you do is wrong, I just think it’s better to learn to manage your fire! Good luck sir!

I used some pretty hard steel and also a 1cm thick barrel. My hood weighs about 60kg (130lbs) and that‘s enough to hold the hood in place no matter what.

Hey man I just got the highland from the wife for anniversary gift, I get mine tomorrow via freight delivery. I seen a cool mod where a guy got some wood and through bolted them to the metal grate rack so you could have a nice stained wood surface to put your thermostats and what nots on. I’m doing pretty much the same mods you have but I am happy you shared the fact the gasket burns off on the firebox. Awesome videos bro!

I have watched several vids on mods of smokers and I am still wondering why the mods? I have never done any of that and prepare some excellent vittles for my family. I used to have the Char-Griller Smoking Pro but mother nature ate that one up. Now I am using the Char-Griller Legacy. It has no side firebox, but I still make it work.

I think a lot of folks have visions of being the next Pit Master. I believe its why ordinary folk will spend 2K and up on a custom smoker. That being said you can make anything work. I have what the BBQ gurus call a cheapo smoker. A Char Grill that looks similar to this one except it is not a reverse smoker. It leaks smoke and heat like colander leaks water. So it takes a lot of work on my part to maintain heat (enough) to finish a cook. I guess if I did some of these mods at least with sealing it and all, I'd probably cut my work load by 1/4 to 1/3. But the family enjoys the meals and I have no interest in being a Pit Master, so let it leak away! I'll replace it one day, but certainly not with the $2K+ variety. I have better ideas for that kind of money.

Mine runs 30-40 degrees cooler at the grates vs the top thermometer

Dont know if you have found out why that happens already, but its because the smoke stack is too high. The smoke stack brings all the heat up above the grates. (This doesn't happen as bad if you have the tuning plate)

Door seal?? Years ago appliance parts houses used to sell a generic replacement "door seal for oven doors"...a very durable, high temperature seal that was fairly easy to install. I think the best seal you can get would be worth the price. Good luck.

more even temperature in the smoke chamber. otherwise the area right near the firebox is pretty much unusable. I just did the reverse flow mod to my stock OK Joe. Should be able to use the whole surface now.

Was up man. I have the regular model OKJ HIGHLAND. Mine isn’t reverse flow . I just made a Mods/ Hacks Video 2 weeks ago. I get 0-5 degrees difference in my cooking chamber.

I sealed the firebox before I bolted it together! Like a motor! I also sealed every bolt. It took 1.25 tubes. So yah! It’s sealed. I will be drilling out the port cover soon for my temp cords!

Use the high heat seal for the firebox. It's a higher heat resistant mesh seal.

@@BSBBQ still residual gas in the tank, that expands with enough heat. Unless it has been purged with nitrogen, it's a potential bomb but you're far enough from the smoker.

I purchased a 6x8 welding blanket from Harbor Freight, like $25. I was given a small CHEAP smoker for FREE. Fold it in quarters but you'll know what you'll need. Was doing a brisket and it started raining, just put a scrap piece of plywood on top of the blanket. No problems with keeping temperature, actually stayed warmer. Also purchased some of those welding magnets, to help hold the blanket in place, if windy. I live in Central Virginia so it does tend to snow and get cold.

Yes. Seal it as you put it together. Then season.

I did that and more smoke escape on mine. Took it off and minimal smoke escaped. On the fire box it worked great.

Yes, sir. The bark doesn't come from direct heat. There shouldn't be any direct heat when smoking.

I was wondering this myself. He is using the chimney for a reverse flow but with the baffle plat it is no longer a reverse flow.

Put your temp gauges at grate level.

All good except why are you using a standard flow tuning plate kit when using the reverse flow setup? You need to use the solid plates of the reverse flow tuning plates for a true reverse flow. Just change your exhaust to standard flow for better results with the tuning plates your using or buy the correct tuning plates.

The problem with putting those clamps where you did it kicks the bottom of your door out because it makes it flex forward second of all I would never use those again. I did them on mine. They are crap. Yes they stop some of it but with problems it makes it too airtight smokers. Need to breathe a little bit. There’s other mod you can do to the firebox and stuff to help with your door. You should just kind of leave it be because it does need to breathe a little bit, all even top quality smokers breathe a little little bit there especially when your first start the month

I like what you did, and I haven't looked for myself but it seems like if your spending 300 on the smoker and another 200/250 on modifications to make it do what you want, you can't find a 5 to 6 hundred dollar smoker?? That just works?? Hmmmm

You can put lipstick on a pig but at the end of the day, its still a pig. As you can see in my newer videos, I did end up upgrading to a VERY nice new smoker. A Lone Star Grillz beauty.

I have the same mods on mine, I've been smokin for years and just bought this pit. I am having a major problem of the firebox getting enough air....i see you have what looks to be small electric fan by the side door of fire box and the door open. I'm thinking i may have to do this as i cant get a good fire in the box, I am a stick burner not a big charcoal guy...just use charcoal to get my sticks started. If not using the real reverse plate your not use a RF smoker.... Can't believe it cook as good as it does.... More like a offset with stack on wrong side.... Jmo

This was pointed out to me a while ago. LOOOOONG time ago. I since covered my current baffle plate with triple layered thick aluminum foil. It is now a reverse flow pit. Funny thing is, it works almost the same. A LITTLE better than before. But not much. Trash is trash either way.

Over kill on mods... I run with no seal at all let smoker seal it self after 4 cooks . turn your bottom racks in to a baffle plate . and no charcoal basket is need unless you are running charcoal .

You guys should definitely not use cutting fluid on any bits for anything that touches food. If you want a type if coolant for bits, I'd suggest using vegetable oil. That's what actual machine shops use for food and medical industries.

300 dollar smoker. The longhorn is 700 bucks on Amazon and home depot. Without the mods.

Dont run it reverse airflow... those cheap pit already give average performance... that particular pit on reverse flow setup is terrible...

@@christianleblanc1563 I caulked where the pit bolts to the cooker and caulked the stack. I put the smoke gasket around the cooker only. Oh I also drilled through the side wall to run my temperature lines and installed a gasket. That smoke tray is stupid. Might aswell get a pellet smoker if you need that.

dude spends more time on screwing up the design of the grill then learning how to use it, can only think what his old lady's car looks like because you know he's not screwing up his truck, or he just drive a dodge POS. Sorry I took a shot of Jack every time he said mod, sometimes modifying doesn't make it better, it like a lie you need two to fix the one already told.
