Yea this seems like a lot of work and alot to keep up with. also seems like a delicate balance of profit vs overhead. I love this video. Would be cool if you had a live webcam during business hours.

Joe I like your tours of your food truck as it gives a really good idea as what it takes to run a food truck, it is not as simple as many would think, Please do a video of Friday, as it must be a zoo at times, When I get to El Paso I will look you up.

Joe talk to Old School....you should have a lot more sub's. I've been watching for last two years. You are great....I find lots of recipes from you I like trying. I know the food truck helps, your brother can do this and you can expand it. Just keep going, this was really good.

Smoked whole sweet potatoes served with the browned mini marshmallows or a cinnamon brown sugar crumble topping would be a good idea. Sell it as a baked potato. I agree. A fryer isn't necessary. Thank you for sharing your techniques. A day of service would be nice to see. 👍

Food truck life is no joke,, Most people dont realize what goes into running a business like this. Your running a restaurant but on wheels , The work doesnt end when the doors close,, theres still the business side of the truck , meaning doing the books, figuring out and ordering the food as well as supplies and also if you dont have a delivery service, traveling to get the supplies. Thats the part the customers DONT see and it is very time consuming. Talking from experience here,, as i had my own truck for years. Keep up the great work Joe !!!! Your food looks amazing and there is no greater satisfaction that seeing a happy customer enjoying the fruits of your labor or in this case , your great BBQ !!!!! One last note,, KEEP THE VIDEOS COMING !!! they are truly enjoyable.

Would like to see some of the sides you make as a video. Most of the time it's the same old slaw and potato salad... you mentioned smoked peppers and corn? This was a great video!

Really enjoyed every bite of food I had on my platter. That Chile relleno sausage stood out to me the most. I'll be going back to try everything else I didn't get to try on my first trip.
