Rob- here's a tip for seasoning your fish. After you fillet them, dry them off and let them get really cold in the fridge. Pull them out and salt them with kosher salt. Put them on a metal rack so air can get all around them, and let the salt do it's work. It takes about 1 hour, but you can go longer if you like. You're killing 2 birds with one stone. You're bringing the meat up to room temp to help in the frying process, and the salt will absolutely permeate the meat. By doing it this way, the salt is in the meat and not just on the batter and it makes for a MUCH better (and more flavorful) end product. It's the ONLY way I'll fry fish now. Once you do it, you won't go back. If you feel weird about leaving the fish out for an hour, then salt it and put it back in the fridge. But make sure you leave it on the rack so it can have air all around it. But trust me, the fish is fine on the counter for an hour.
