Japanese Snow Apple Farming Technique, and Harvesting Apple and Storing it under snow.The technique was born of necessity, but it turns out that the natural refrigeration and steady humidity raises levels of amino acids, making carrots, apples, daikon, and other root vegetables sweeter, and their aroma less earthy. Now producing more than they need, farmers market these yukinoshita (under-the-snow) fruits and vegetables across Japan, providing extra income during an otherwise lean season.

Can we replicate this at home by putting the apples in the freezer? I always thought that the apples get mushy when stored in the freezer

When I started doing business with my uncle which a fish farming I realize it takes a lot of effort technique dedication and a lot of work before the food will come to our platter .. farming is risky business fighting on the weather , pest and monitor the plants or fish and pay for labor .. that’s why I have a huge respect of the farmers thank u for ur hard work to bring food on us

That was after winter in Japan that we saw an apple tree with beautiful apple fruit for the first time at our neighbor's farm. This is why I love Japanese people, because they are so hardworking and wise. Very nice people 💖💖🇯🇵🕊️

Most Fruits and vegetables always taste very sweet in the winter. Some exceptions are mangoes and watermelons, which taste sweet in summer. In Canada and Germany, they harvest grapes frozen by Snow on vines and immediately make wine with it. It's called Ice wine. And it's supposed to taste very sweet and rich (I don't drink so I am commenting on what I have read and heard). It's a dessert wine. And it's very very hard to make since the labor should be very quick, before sunrise when the grapes ice thaws, making it impossible to make ice wine. You also need a very large labor force to pick them in a matter of hours in total darkness save for few lights. It's why it's so expensive and made in few batches. Kudos to these folks who work hard in harsh environments!

I don't drink alcohol, too, but that sounds amazing, I wonder if there would be some ice grape juice available next to ice wine, but I guess they'd need to pasteurize it to be able to sell what would change everything or they'd need to keep it cold all the time what would cost a lot. Btw when you harvest the potatoes too late and some are frozen, they turn sweet, too, the frost turns longer chains of carbohydrates into shorter ones - into sugar.

See how so many older/elderly Japanese still doing a lot of manual labor and truly enjoying/loving it while the younger generation doesn't care for farm work. The younger generation leaves for big cities as salary people - boring, stressful life and keeping up with glamorous lifestyles.

@@solaris5922 average is $2100/month for older populations with a pension isn't bad in Japan. Living in the countryside is cheaper/inexpensive. For younger generations, it depends, if they plan to start a family yes they may struggle and move to a bigger city, and some thrive well with enough income.

Apples you see in the store are selected for their medium size and no blemishes, apples that come from any orchard are all sizes and the ones that are too big or wrong shape or blemished get sent for juices and other apple products

We, in Canada, make ice wine out of frozen apples. We let the apples freeze on purpose, which makes them sweeter
