That was an absolutely solid demonstration of how fried dumplings should be made! You would think that as Jamaicans we would have this down pat by now but many of us go through this thing where we make the perfect dumplings at one point and weapons of cranial destruction the next! Once I went to this shop where I ordered dumplings and when I paid and went back to eat breakfast, I couldn't even bite it! Needless to say these dumplings became a joke, then a complaint and for the rest of the afternoon, something in the lines of durability testing and I think the damn thing chipped my tiles! My mother used to do something similar but with butter beans, one of my favorite meals that she served us for dinner with plain rice, She also made the world's best fry dumplings, at least in my opinion. 😊
