Soft and Fluffy Taiwanese Cake

Found out about this jiggly cake store after asking a local Taiwanese.
I haven't heard of it before but it seems very popular with the locals. There were queues even though we went on a weekday afternoon.
There's quite a few different flavors and they go by weight rather than a fixed size. So you let them know how heavy you want your cake and they will cut for you an estimate of it.

It was real nice of the workers to show off the inside after they cut it for you once it came out of the oven. Or maybe they were just doing that to check the insides for doneness?

Live in the UK, so not sure if we have jiggle cakes. Onee day, I hope to travel somewhere that sells Jiggly cakes, they look delicious, soft. Also, I love the way, they cut the cake.

sherrell keitt goldbelly.com. Look for cheesecake and look for keki modern cake shop, but it's pricey. I ordered the jiggly cheesecake, it was really good.

Very easy to make, here is the at home recipe: 1 package of cream cheese, 2 egg, 1 cup of pancake mix, 0.5 cup of heavy cream, 0.5 cup of sugar and butter. Mix the cream cheese, egg yolks, pancake mix and heavy cream together. With an electric mixer, mix the 2 egg whites with the sugar until stiff peaks. Fold in the two mixtures until blended. Add in any dried fruit to bottom or top. Butter the sides of a rice cooker dish and put in. Turn on the rice cooker for 70 minutes.
