Ok so I found some details; there is a thread on reddit with photos of sohla’s ig where she describes how ba only pays the white chefs for their video appearances. I know, Terrible. That is what there’s comments are about.

She does get paid. Is it possible the staff who have worked there much longer, bring the company more money etc, will get paid more than a new staff member? If you believe her ridiculous racist lies that the company paid her nothing because she isn't white then you've got rocks in your head.

Sohla should have her own show, should be paid for videos, and should be paid according to her experience. She's a huge benefit to the BA staff and should be treated as such.

Her experience is mostly at fast food chains and a failed restaurant. If she got paid for her actual experience it would be much less than BA already pays her.

@@jjonvhs.7408 that's not what I said. Obviously she is black. I'm asking if the reason she is paid less is because she is black or if there is another reason. If we look at the wage disparity between men and women, there is a gap. But a significant reason for that gap is that men tend to negotiate higher salaries or better deals. I'm wondering if this is maybe what has happened here. It seems feasible that she has merely failed to negotiate terms that are more beneficial to her. I haven't yet seen any evidence to suggest that the reason she was paid less is because she is black.

Sohla obviously didn't research for this vid, I'm rather disappointed. Nothing about texture development in the minced meat, why you might want to use bread-flour instead of all-purpose-fluor, and her roll and wrapping skills were at best those of a complete beginner. The vids by "Chinese Cooking Demystified" or "Souped Up" for example are way more complete and knowledgeable on dumplings.

I am amazed by your bravery and courage in speaking out against the mistreatment of BIPOC at BA and the discriminatory pay and practices. Last time I cried about a person I didn't know was June 8th, 2018 - the day Anthony Bourdain died. Today I cried for the first time since because Sohla deserves respect and love, and she is not getting it. It's heartbreaking. Please be fair to her. She has a kind soul.

@@emboe001 She gets paid as an associate editor, which is only 50k a year (in NYC that's barely poverty line). She doesn't get any additional compensation for video appearances while other on-screen (who happen to be white) are compensated.

I love the charming awkwardness and the making sure of stuff and and the team talking in the background and the not quite perfect but still amazing. It’s so nice to see that people are doing the best they can under the circumstances.. like you can see their effort and it’s heartwarming. I like this style of video

There's a great place in Toronto called Dumpling House and as the name suggests, their whole menu is dumplings. The first time I went there was the first time I ever had skirted dumplings. Made the mistake of ordering a bunch thinking each order was going to be 3 or 4 dumplings based on previous dumpling orders at other places, turns out they are like a whole sheet pan of dumplings skirted together per each order. Changed my life for the better.

Seroioulsy? Despite the fact that Sohla obviously didn't research her subject? Nothing about texture development in the minced meat, why you might want to use bread-flour instead of all-purpose-fluor, and her roll and wrapping skills were those of a complete beginner. The vids by "Chinese Cooking Demystified" or "Souped Up" for example are way more complete and knowledgeable on dumplings.

Yeah, I'd love to know more about her culinary background and personal heritage - she brings in so many different inspirations and tries so many things. Her videos are always great, and even ones like this one where I'm like "oh I know how to do dumplings" - the skirt slurry? Never seen that before and now I'm going to need to try it.

the skirt technique is usually used for 生煎包 and not dumplings like these, so she didn't 'invent' that method

FYI Dumplings freeze very easily. First freeze them on sheet trays and then move to a ziploc bag and they stay forever. I made a bunch of dumplings at the beginning of lockdown and now get to enjoy them whenever I feel like.

This. I was always worried about freezing dumplings I only found out about this recently. I've made pork steam buns (steamed then frozen), korean pork and tofu dumplings and Ham Sui Gok or fried crescent dumplings and tonight I'm trying to make Har Gow with coriander. The Ham Sui Gok I was worried wouldn't freeze well raw because of the weird texture of the dough but it worked and they fried up perfectly.

Pro chef move😌 It’s one of the first things we learn at culinary school. As long as you have a good knife and correct grip on what you’re cutting, there’s very little chance of cutting yourself.
